Description

This gourmet salad with chicken and roquefort is a real treat for the taste buds! I often prepare it in the summer because it is fresh, copious and full of flavors. Grilled chicken, creamy roquefort, juicy cherry tomatoes and crunchy red onion go perfectly together. The homemade vinaigrette with mustard and herbs from Provence brings an irresistible Provencal touch. It is a perfect salad for a sunny lunch or a light dinner. Feel free to vary the ingredients according to your desires and what you have on hand. A real treat!

Ingredients (13 ingredients)

  • 2 piece Chicken fillet fillets
  • 1 salade salad
  • 3 slice bacon
  • 2 piece eggs
  • to taste Cherry tomato
  • 1 oignon onion
  • 100 g roquefort
  • 1 c. à s. mustard
  • 5 c. à s. olive oil
  • 3 c. à s. wine vinegar
  • 1 pinch herbs from Provence
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (7 steps)

Cooking the eggs

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Place the eggs in the simmering basket. Fill the bowl with 500 ml of water. Cook the eggs for 10 minutes / Varoma / Level 1.

Cooling and cutting the eggs

Remove the eggs from the simmering basket and plunge them into cold water to stop cooking. Peel the eggs and let them cool completely. Once cooled, cut the eggs into pieces.

Bacon preparation

Cut the bacon into small pieces. Fry the bacon in a pan until crispy. Set aside.

Chicken preparation

Cut the chicken fillets into small pieces. Fry the chicken pieces in a pan with a little oil. Add the herbs from Provence, salt and pepper. Cook until the chicken is golden brown and cooked through. Set aside.

Vegetable preparation

Cut the cherry tomatoes in half. Peel and cut the onion into thin slices. Cut the roquefort into cubes.

Vinaigrette preparation

In the Thermomix bowl, mix 1 tbsp of mustard, 5 tbsp of olive oil, 3 tbsp of wine vinegar, a pinch of salt and pepper. Mix 10 Sec./Level 3.

Salad assembly

In a salad bowl, arrange the salad, the chicken pieces, the crispy bacon, the cut eggs, the cherry tomatoes, the onion and the roquefort. Pour the vinaigrette over the ingredients and mix gently. Serve immediately.
