Description

This potato and pumpkin gratin is a comforting dish, perfect for autumn evenings. I love the sweetness of the pumpkin which goes wonderfully with the melting texture of the potatoes. This dish is easy to prepare and ideal for a meal with family or friends. Fresh cream and parmesan bring a smoothness and a delicious taste. It can easily be prepared in advance and browned at the last moment. A real treat, especially when it's cold outside! Feel free to add a pinch of nutmeg to enhance the flavors. This gratin is a tasty and nourishing vegetarian dish.

Ingredients (11 ingredients)

  • 10 cl fresh cream
  • 1 branche thyme
  • 1 c à s olive oil
  • Salt
  • Pepper
  • 1 œuf egg
  • 40 g stale wholemeal bread
  • 200 g pumpkin
  • 60 g parmesan
  • 50 g butter
  • 4 pièces large potatoes

Cooking the potatoes

Wash the potatoes carefully. Place them in the Thermomix cooking basket. Fill the bowl with 1 liter of salted water. Cook the potatoes for 15 minutes / Varoma / Stufe 1. Drain the potatoes after cooking.

Preparing the pumpkin

Thermomix® Setting
5 min/248°F/Speed 1 120

Remove the skin from the pumpkin, remove the seeds and cut it into small dice. Pour 1 tablespoon of olive oil into the Thermomix bowl. Add the diced pumpkin, thyme, salt and pepper. Cook covered for 5 minutes / 120°C / Stufe 1.

Preparing the stuffing

Cut the potatoes in half lengthwise. Using a small spoon, remove the flesh from the potatoes and place it in a salad bowl. Reserve the potato skins to garnish them later. In the salad bowl, mix the softened butter, egg and fresh cream.

Mixing the ingredients

Add the potato flesh to the preparation in the salad bowl and mix gently. Add the cooked diced pumpkin and mix gently so as not to crush them. Season this preparation with salt and pepper.

Preparing the breadcrumbs

Thermomix® Setting

Put the piece of stale wholemeal bread in the Thermomix bowl. Pulverize for 10 Sek. / Stufe 10 to obtain breadcrumbs.

Garnishing and browning

Garnish the potato skins with the preparation. Sprinkle with breadcrumbs. Place a few parmesan shavings on each potato. Bake in a gratin dish for 12 to 15 minutes in an oven preheated to 180°C.
