Description

This artichoke gratin with farmer's bacon is a comforting and flavorful dish, perfect for winter meals or special occasions. I love preparing this gratin because it is both simple and elegant. The artichokes, cooked to perfection, go wonderfully with the crispy farmer's bacon and cheese. The crème fraîche and eggs provide incomparable smoothness. It's a dish I often make for my family and friends, and it's always very popular. A real delight for lovers of authentic and generous flavors!

Ingredients (6 ingredients)

  • 25 cl crème fraîche
  • 50 cl milk
  • 4 piece eggs
  • 300 g thin slices of rindless bacon
  • 500 g salers cut into dice
  • 5 piece large camus artichokes

Cook Artichokes

Thermomix® Setting
35 min/Varoma/Speed 1 Varoma

Fill the Thermomix bowl with a large amount of salted water. Place the whole artichokes in the simmering basket and cook for 35 min/Varoma/Stufe 1.

Preparation of the terrine

Line the bottom and sides of a terrine with the thin slices of rindless bacon.

Preparation of the egg cream

Thermomix® Setting
20 sec/Speed 4

In the Thermomix bowl, whisk the eggs, crème fraîche and milk for 20 Sek./Stufe 4. Pepper.

Preparation of cooked artichokes

Refresh the artichokes under cold water, drain them. Remove the leaves, remove the hay and scrape the bottoms carefully. Cut the artichoke bottoms into pieces.

Assembling the gratin

In the terrine lined with bacon, distribute the diced salers and the pieces of artichokes. Then pour in the egg preparation.

Baking in the oven

Bake in a bain-marie at 180 °C for 1h15 (75 minutes).
