Description

This Gratin Penne recipe with Pancetta and Artichokes is a real treat! I especially like to make it in the spring when artichokes are in season. The combination of the creamy béchamel sauce, crispy pancetta and tender artichokes is simply unbeatable. It is a hearty dish that is perfect for a cozy lunch or dinner. The preparation is straightforward and succeeds with the Thermomix® in no time. An absolute must for all pasta lovers! If you like, you can add some freshly grated pepper over it.

Ingredients (6 ingredients)

  • Artichokes
  • Penne
  • Béchamel
  • Pancetta (stretched)
  • Grated Parmesan
  • to taste Salt

Preparation (10 steps)

Prepare artichokes

Clean the artichokes, remove the outer leaves, cut off the tips and halve. Remove the hay. Place the artichoke quarters in salt water.

Blanch artichokes

Thermomix® Setting
4 min/212°F/Speed 1 100

Put the prepared artichokes in the mixing bowl and cover with salt water. Cook for 4 min./100°C/level 1.

Cool artichokes

Remove the artichokes from the mixing bowl with a slotted spoon and place in a bowl with cold water. Keep the cooking water in the mixing bowl.

Cook pasta

Add the penne to the remaining cooking water in the mixing bowl and cook al dente according to the package instructions. The cooking time may vary depending on the variety. Be careful not to overcook the pasta.

Fry pancetta

Fry the pancetta in a pan without fat until crispy. Then drain on kitchen paper and cut into small pieces.

Prepare artichoke béchamel

Thermomix® Setting
10 sec/Speed 8

Put some of the cooled artichokes together with the béchamel sauce in the mixing bowl and puree for 10 sec./level 8.

Refine sauce

Add the pureed artichoke béchamel to the remaining béchamel sauce and mix well.

Mix pasta

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Drain the cooked penne and return to the mixing bowl. Add some of the artichoke béchamel and the crispy pancetta. Mix for 20 sec./counter-clockwise rotation/level 2.

Prepare gratin

Pour the pasta into a baking dish. Spread the remaining artichoke béchamel over it and sprinkle with grated Parmesan.

Bake gratin

Preheat the oven to 180°C and bake the gratin dish for about 30 minutes until the surface is golden brown.
