Description

These grilled aubergine slices are a real treat and super easy to prepare! I love how the aubergines get a slightly smoky note from grilling, which harmonizes perfectly with the fresh herb marinade. Preparation with the Thermomix® makes it even easier to optimally develop the flavors. Whether as a side dish for grilling, as part of a summery appetizer plate, or simply as a light snack - these aubergines are versatile. And the best part: they are vegetarian and vegan! An absolute must for every barbecue party.

Ingredients (7 ingredients)

  • 2 piece Aubergines
  • 4 tbsp Olive oil
  • 1 clove Garlic
  • 1 tbsp chopped Parsley
  • 0.5 piece Organic Lemon - Juice
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Prepare aubergines

Cut aubergines into approx. 1 cm thick slices, then place in a sieve and salt. Let the salt sit for 20 minutes, then pat the aubergine slices dry.

Chop garlic

Place a garlic clove in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare marinade

10 sec/Speed 3

Add olive oil, chopped parsley, pepper and the chopped garlic to the mixing bowl and stir for 10 sec./speed 3.

Marinate aubergines

Mix aubergines with the marinade in a bowl.

Grill aubergines

Grill aubergines on the grill rack or in the grill pan for 2-3 minutes per side. Then drizzle with lemon juice.
