Description

This gluten-free basic dough for bread and pastries is easy to make in the Thermomix®. The main ingredients are gluten-free flour, water or soy milk, oil, salt and yeast. The preparation time is approx. 90 minutes, of which 20 minutes are active working time. The recipe is vegetarian and ideal for a gluten-free breakfast or as finger food. Suitable for anyone who wants to bake bread and rolls without gluten.

Ingredients (6 ingredients)

  • 500 g gluten-free Flour
  • 400 g Water or Soy Milk
  • 5 EL Oil
  • 10 g Salt
  • 42 g Fresh Yeast
  • 15 g Dry Yeast

Preparation (7 steps)

Mix Ingredients

Add 500 g gluten-free flour, approx. 400 g water or soy milk, 5 tbsp oil, approx. 10 g salt and 1 pack fresh yeast (42 g) or 15-20 g dry yeast to the mixing bowl.

Knead Dough

Knead all ingredients in a food processor for 3 minutes to form a dough. In the Thermomix: 3 min./kneading setting

Add Optional Ingredients

Mix in nuts, bread spice, carrots or a spice mixture as desired.

Let Dough Rest

Let the dough rest for about 10 minutes.

Shape and Fill Dough

Then fill the dough into a bread baking pan. Press a longitudinal cut in the middle with a spatula dipped in cooking oil.

Let Dough Rest Again

Let the dough rest again in the baking pan for about 40 minutes.

Baking

Baking time: 40-50 minutes at 220 °C in a preheated oven.
