Description

This almond orange Bundt cake, prepared in the Thermomix®, is a juicy cake with almonds, orange and cinnamon. The recipe from the cake category is vegetarian and is particularly suitable for the winter time or as a Christmas dessert. In just 40 minutes preparation time arise about 6 servings. Ideal for breakfast or as a sweet treat for the whole family.

Ingredients (11 ingredients)

  • 50 g Margarine
  • 1 Orange
  • 100 g Almonds ground
  • 100 g Flour
  • 75 g Sugar
  • 50 g Chopped almonds
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 1 Prise Salt
  • 100 ml Soy milk
  • 10 Tropfen Bitter almond flavor

Preparation (7 steps)

Prepare orange

Wash an orange with hot water and dry it. Grate the peel and set aside 1 tsp of grated orange peel. Squeeze out the juice and measure 50 ml.

Melt margarine

Put 50 g margarine into the mixing bowl and melt for 3 min./50°C/speed 1.

Mix dry ingredients

Put 100 g ground almonds, 100 g flour, 75 g sugar, 50 g chopped almonds, 2 tsp baking powder, 1 tsp cinnamon, 1 tsp grated orange peel and 1 pinch of salt into the mixing bowl and mix for 10 sec./speed 3.

Add and mix liquid ingredients

Add the melted margarine, 100 ml soy milk, 10 drops of bitter almond flavor and 50 ml of the squeezed orange juice to the dry ingredients in the mixing bowl and mix for 20 sec./speed 3. Use the spatula to push down from the edge and mix for another 10 sec./speed 3.

Fill dough into molds

Fill the dough into greased mini Bundt cake molds (or muffin molds).

Baking

Place the filled molds in the preheated oven at 170 °C circulating air (190 °C top/bottom heat) and bake for approx. 20 minutes. Make a stick test.

Cool and Serve

Let the mini Bundt cakes cool down in the mold, carefully remove them from the mold and decorate as desired or serve sprinkled with powdered sugar.
