Description

This marbled Bundt cake is a real eye-catcher on any coffee table! I especially like to bake it during the Christmas season, but of course it tastes good all year round. The combination of light and dark dough, refined with cherries, makes it particularly juicy. The chocolate buttercream and the crunchy chocolate coating perfectly round off the taste experience. A recipe that takes a little time, but the result is worth every minute! Ideal for special occasions or just to spoil yourself.

Ingredients (13 ingredients)

  • 250 g Bittersweet chocolate couverture
  • 250 g Cherries
  • 385 g Butter
  • 200 g Sugar
  • 2 tbsp Sugar
  • 1 pinch Salt
  • 4 piece Eggs (size M)
  • 225 g Flour
  • 100 g Peeled ground almonds
  • 50 g Cornstarch
  • 3 gestr. TL Baking powder
  • 300 ml Milk
  • 0.5 packet Pudding powder

Preparation (14 steps)

Chop and melt couverture

Thermomix® Setting
4 min/122°F/Speed 2 50

Place 100 g of bittersweet chocolate couverture in pieces in the mixing bowl and chop for 5 sec./speed 8. Then melt for 4 min./50°C/speed 2 and transfer to a bowl. Clean mixing bowl.

Stir butter, sugar and salt until creamy

Thermomix® Setting
3 min/Speed 4

Add 385 g butter, 200 g sugar and 1 pinch of salt to the mixing bowl and stir for 3 min./speed 4 until creamy.

Stir in eggs

Thermomix® Setting
20 sec/Speed 3

Add 4 eggs (size M) one after the other through the lid opening and stir in for 20 sec./speed 3 each time.

Mix dry ingredients

Mix 225 g flour, 100 g peeled ground almonds, 50 g cornstarch and 3 level tsp baking powder in a separate bowl.

Prepare dough

Add the dry ingredients alternately with 5 tablespoons of milk to the mixing bowl and stir in for 30 sec./speed 3. Use a spatula to loosen everything from the edge.

Divide dough and stir in couverture

Pour 1/3 of the dough into another bowl. Add melted couverture and stir with a spatula. Pit, halve and fold 250 g of cherries into the dark dough.

Fill doughs into the pan

Spoon both doughs into a greased Bundt cake pan (approx. 2 1/2 liters capacity) sprinkled with breadcrumbs. Draw through in a spiral shape with a fork.

Prepare pudding

Thermomix® Setting
5 min/212°F/Speed 2 100

For the cream, stir ½ pack of pudding powder, 1 tablespoon of sugar and 4-5 tablespoons of milk in a bowl until smooth. Add remaining milk (except for 4-5 tablespoons) to the mixing bowl and bring to a boil for 5 min./100°C/speed 2.

Complete pudding

20 sec/Speed 3

Add stirred pudding powder and stir in for 20 sec./speed 3. Transfer to a bowl, cover the surface with foil and let cool.

Prepare buttercream

Thermomix® Setting
2 min/Speed 3,5

Add 135 g of butter at room temperature and 1 tablespoon of sugar to the mixing bowl and whisk with the butterfly for 2 min./speed 3.5 until creamy white.

Stir in pudding

Thermomix® Setting
1 min/Speed 3

Stir the pudding well and add it spoonful by spoonful. Stir in the butter with the butterfly for 1 min./speed 3.

Fill the cake

Cut off the upper third of the marble cake. Spread buttercream on the lower part of the cake, carefully put the lid back on and chill.

Melt couverture

Place 150 g of bittersweet chocolate couverture in pieces in the mixing bowl and chop for 5 sec./speed 8. Then melt for 4 min./50°C/speed 2.

Coat the cake

Coat the Bundt cake evenly with it and chill until the glaze is firm.
