Description

This Cantabrian-style cod stew is a traditional dish that will transport you to the mountains of northern Spain. The cod, juicy and tender, combines perfectly with fresh vegetables and a homemade tomato sauce that gives it a special touch. I have been preparing it for years and it is always a success at home. It is ideal for a family meal on a cool day, and can be accompanied with a good bread for dipping in the sauce. The key is in the quality of the cod and the affection with which it is prepared. Ingredients (13 ingredients)

  • 350 g Cod
  • 1 piece Red pepper
  • 1 piece Italian green pepper
  • 1 piece Onion
  • 1 piece Courgette
  • 100 g Mushrooms
  • 200 g Homemade fried tomato
  • 0.5 container White wine
  • to taste Wheat flour
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Ground black pepper
  • to taste Parsley

Preparation (9 steps)

Dry and flour the cod

Dry the cod loins well with kitchen paper. Lightly flour with wheat flour. Set aside.

Chop the onion

Peel the onion and chop it into quarters. Put it in the Thermomix bowl and chop for 3 sec./Stufe 5.

Sauté the onion

Add a drizzle of extra virgin olive oil to the bowl. Sauté the onion for 3 Min./120°C/Stufe 1.

Add and chop the peppers and courgette

Thermomix® Setting
5 min/248°F/Speed 1 120

Clean and chop the red and Italian green peppers into medium pieces. Chop the courgette into dice. Add the peppers to the bowl and cook for 5 Min./120°C/Stufe 1.

Add the courgette and mushrooms

Thermomix® Setting
2 min/248°F/Speed 1 120

Add the chopped courgette and mushrooms to the bowl. Cook for 2 Min./120°C/Stufe 1.

Incorporate the white wine and reduce

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Add the white wine to the bowl and program 3 Min./Varoma/Stufe 1, without the measuring cup, so that the alcohol evaporates.

Add the tomato sauce and season

Thermomix® Setting
5 min/212°F/Speed 1 100

Incorporate the homemade tomato sauce into the bowl. Season with salt and ground black pepper to taste. Cook for 5 Min./100°C/Stufe 1.

Add the cod and cook

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Place the cod loins in the Varoma. Pour 500 ml of water into the bowl. Place the Varoma in its position and program 10 Min./Varoma/Stufe 1.

Serve

Remove the Varoma. Place the cod loins on the sauce in a serving dish. Sprinkle with chopped parsley and serve immediately.
