Description

This red bean stew with pig's trotters is a traditional dish that reminds me of my childhood. My grandmother used to prepare it on cold winter days, and the aroma filled the whole house. The red beans, cooked slowly with the pig's trotters, acquire a soft texture and a deep flavour. The hogao, with its base of tomato, onion and garlic, gives it a touch of freshness and a point of acidity that balances the richness of the dish. It is a perfect dish to share with the family, especially at Christmas or on any special occasion. I hope you enjoy it as much as I do!

Ingredients (10 ingredients)

  • 750 gr red beans
  • 8 tazas water
  • 1 piece pig's trotter
  • 1 kilo ripe red tomatoes
  • 2 piece white onion
  • 1 piece scallion
  • 5 dientes garlic
  • neutral oil
  • salt
  • pepper

Preparation (8 steps)

Preparation of the beans and pig's trotters

Soak the red beans in 8 cups of cold water from the night before. The next day, drain the beans and place them in the Thermomix bowl along with the pig's trotter and a pinch of salt.

Cooking the beans and pig's trotters

Add 8 cups of water to the bowl. Program 120 Min./100°C/Speed 1. Once the time is up, check that the beans are soft. If they are not, program an additional 30 minutes.

Preparation of the hogao: onion and garlic

While the beans are cooking, prepare the hogao. Peel 2 units of white onion, 1 unit of scallion and 5 cloves of garlic. Cut the white onion and the scallion into quarters. Put the white onion, the scallion and the garlic cloves in the Thermomix bowl and program 3 Sec./Speed 5.

Sautéing onion and garlic

Add 50 ml of neutral oil to the bowl. Program 5 Min./120°C/Speed 1.

Add the tomato

10 min/212°F/Velocidad 1 100

Wash and cut 1 kilo of ripe red tomatoes into quarters. Add the tomatoes to the Thermomix bowl. Program 10 Min./100°C/Speed 1.

Crush the hogao

20 Seg./Velocidad 5

Crush the hogao programming 20 Sec./Speed 5. Season with salt and pepper to taste. If necessary, add a pinch of sugar to control the acidity of the tomato.

Incorporate the hogao to the beans

Thermomix® Setting
40 min/212°F/Velocidad 1/Giro a la izquierda 100 Reverse

Pour the hogao into the Thermomix bowl with the beans and pig's trotters (reserve a little for presentation). Program 40 Min./100°C/Speed 1/Reverse rotation. Stir occasionally with the spatula to prevent sticking.

Correct the flavour and serve

Correct the flavour with salt and pepper. Serve hot and add a little reserved hogao on top.
