Description

A hearty wild boar goulash in hunter's style, prepared with wild boar meat, bacon, onions and chanterelles. This rustic dish is ideal for autumn and winter and is perfect as a festive main course. Preparation in the Thermomix® simplifies the cooking process and ensures an aromatic result. The goulash is rich in proteins and offers an intense taste experience. The preparation time is approx. 90 minutes, sufficient for 4 portions.

  • 1000 g Goulash from Wild Boar
  • 3 EL Oil
  • 125 g Streaky bacon
  • 2 Stück Onion(s)
  • 2 Zehe/n Garlic
  • Salt
  • 0.25 Liter Red wine
  • 0.5 Liter Meat broth or Game stock
  • 1 EL Tomato paste
  • Thyme
  • Rosemary
  • Game spice
  • Flour
  • 1 Dose/n Chanterelles
  • 0.5 Becher Crème fraîche
  • Garlic powder

Preparation (9 steps)

Prepare meat

Wash the wild boar meat and pat dry thoroughly with kitchen paper. Then cut into bite-sized pieces. The meat will be seared in a pan later.

Prepare bacon and onions

Cut the bacon into small cubes. Peel and quarter the onions.

Chop onions

Put the quartered onions into the mixing bowl and chop for 3 sec./speed 5. If necessary, scrape down from the edge with the spatula.

Sauté onions

Add the oil and bacon cubes to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop garlic

Peel the garlic cloves, put them in the mixing bowl and chop for 3 sec./speed 7. If necessary, scrape down from the edge with the spatula.

Add and season meat

Add the seared meat, salt, pepper, tomato paste, thyme, rosemary and game spice to the mixing bowl and mix. 1 min./speed 1/reverse.

Deglaze and simmer

Pour red wine and meat broth or game stock into the mixing bowl. Close the lid and simmer for 60 min./100°C/speed 1/reverse.

Thicken sauce

5 min/212°F/Speed 2/Linkslauf 100 Reverse

Mix the flour with some water. After the cooking time, add the mixed flour mixture to the mixing bowl and cook for 5 min./100°C/speed 2/reverse to thicken the sauce.

Add chanterelles and crème fraîche

Add the drained chanterelles, crème fraîche and garlic powder to the mixing bowl and heat for 2 min./90°C/speed 1/reverse. Season to taste and serve.
