Description

This venison goulash is a poem! I especially like to make it in the autumn when the venison is fresh. The goulash gets a wonderfully fruity note from the apples and grapes, which harmonizes perfectly with the hearty venison. Preparation in the Thermomix® is super easy and the result is a tender, aromatic dish that melts in your mouth. Ideal for a festive meal or a cozy evening with friends. Goes well with dumplings or Spätzle. An absolute must for all venison lovers!

Ingredients (15 ingredients)

  • 1000 g Venison goulash (e.g. red deer or fallow deer)
  • 2 EL Oil
  • Salt
  • Pepper
  • 2 keine Onions
  • 2 EL Flour
  • 0.25 l Red wine
  • 0.1 l Apple juice
  • 5 keine Juniper berries
  • 2 keine Allspice seeds
  • 2 keine Bay leaves
  • 1 EL Peppercorns
  • 2 keine Apples
  • 100 g Green grapes
  • 100 g Blue grapes

Preparation (6 steps)

Chop onions

Peel and quarter the onions and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat

Sear the venison goulash in a separate pan with some oil on all sides and season with salt and pepper. Then add to the onion mixture in the mixing bowl.

Season and deglaze goulash

Add flour, salt, pepper, juniper berries, allspice seeds, bay leaves and peppercorns to the meat in the mixing bowl. Add red wine and apple juice. Cook for 90 min./100°C/reverse rotation speed 1.

Add fruits

Peel, core and chop the apples. Add to the goulash in the mixing bowl together with the halved grapes (green and blue). Cook for a further 10 min./100°C/reverse rotation speed 1.

Season the venison goulash with salt and pepper and serve.
