Description

This hearty vegetable soup is an absolute classic of Italian cuisine and warms you from the inside on cold days. I especially like to make it in autumn when the vegetables are fresh from the market. The combination of different vegetables, herbs and Parmesan rind gives the soup an unmistakable taste. It is not only delicious, but also rich in vitamins and fiber. Perfect as a starter or light main course. If you like, you can add some pasta. A dash of olive oil and freshly grated Parmesan should of course not be missing when serving!

Ingredients (17 ingredients)

  • 3 clove Garlic
  • 3 piece Onions, large
  • 2 Stange/n Celery stalks
  • 2 piece Carrots, large
  • 2 piece Potatoes, large
  • 100 g Beans, green
  • 100 g Zucchini
  • 60 g Butter
  • 50 ml Olive oil
  • 60 g Bacon, streaky, diced small
  • 1.5 Liter Vegetable broth or chicken broth
  • 100 g Tomatoes, chopped
  • 2 tbsp Tomato paste
  • 1 bunch Basil, fresh, finely chopped
  • 100 g Parmesan rind
  • 85 g Salt and Pepper
  • Parmesan, freshly grated, for serving

Preparation (5 steps)

Prepare vegetables

Peel the garlic cloves. Peel and quarter the onions. Clean and cut the celery stalks, carrots, potatoes, green beans and zucchini into small pieces.

Sauté bacon and vegetables

2 min/248°F/Speed 1 120

Put butter and olive oil in the mixing bowl and melt for 2 min./120°C/speed 1. Add diced bacon and sauté for 2 min./120°C/speed 1. Add garlic and onions and fry for 2 min./120°C/speed 1. Add celery, carrots and potatoes and stir in for 2 min./120°C/speed 1. Add the beans to the mixing bowl and fry for 2 min./120°C/speed 1. Stir in the zucchini and fry for another 2 min./120°C/speed 1.

Simmer vegetables

Thermomix® Setting
15 min/212°F/Gentle stir speed 100

Put on the lid and simmer the vegetables for 15 min./100°C/gentle stir setting, stirring occasionally. Use a spatula to push the vegetables away from the edge if necessary.

Cook soup

Thermomix® Setting
1 Stunde/212°F/Gentle stir speed 100

Add vegetable broth, chopped tomatoes, tomato paste, basil and Parmesan rind and season with salt and pepper. Simmer gently for 1 hour/100°C/gentle stir setting.

Remove Parmesan rind and serve

Remove and discard Parmesan rind. Serve the soup in large, preheated soup plates sprinkled with freshly grated Parmesan.
