Description

This lingonberry-black beer-BBQ-sauce is a fruity-smoky addition to game dishes and barbecues. The Thermomix® makes the sauce easy to prepare. The preparation time is about 60 minutes. The sauce is ideal for hearty dishes and gives them a special touch.

Ingredients (16 ingredients)

  • 250 g Onions
  • 2 Stück Garlic cloves
  • 40 g Clarified butter
  • 100 g Tomato paste
  • 150 ml Black beer
  • 100 ml Apple vinegar
  • 50 ml Balsamic vinegar
  • 50 ml Soy sauce
  • 2 EL Honey
  • 1 EL Mustard
  • 1 EL Worcestershire sauce
  • 1 TL Celery salt
  • 1 TL Freshly ground pepper
  • 1 TL Sweet paprika powder
  • 0.5 TL Chili powder
  • 250 g Lingonberries (from a jar)

Preparation (5 steps)

Chop onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Put 250g onions in the mixing bowl and chop for 3 sec./speed 5. Then add 2 garlic cloves and chop for 3 sec./speed 7.

Sauté onions and garlic

Thermomix® Setting
3 min/248°F/Speed 1 248°F

Add 40g clarified butter to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add tomato paste and remaining ingredients

Add 100g tomato paste, 150ml black beer, 100ml apple vinegar, 50ml balsamic vinegar, 50ml soy sauce, 2 tbsp honey, 1 tbsp mustard, 1 tbsp Worcestershire sauce, 1 tsp celery salt, 1 tsp freshly ground pepper, 1 tsp sweet paprika powder, 1/2 tsp chili powder and 250g lingonberries (from a jar) to the mixing bowl.

Let it simmer

Thermomix® Setting
45 min/212°F/Speed 2 212°F

Let all ingredients simmer in the mixing bowl for 45 min./100°C/speed 2. Leave the measuring cup on.

Puree

Thermomix® Setting
30 sec/Speed 8-10

Puree the sauce in the mixing bowl for 30 sec./speed 8-10, increasing the speed slowly. Hold the lid tight!
