Description

This chicken dish with broccoli and toasted almonds is a simple and quick delight to prepare. I love the combination of tender chicken, crunchy broccoli and toasted almonds that add a touch of flavor and texture. It's a perfect dish for a weeknight dinner because it's ready in less than 40 minutes. The broccoli, rich in vitamins, goes wonderfully with the chicken, an excellent source of protein. The toasted almonds add a crunchy note and a subtle taste. Feel free to add a pinch of chili to enhance the taste. A balanced and tasty dish for the whole family!

Ingredients (8 ingredients)

  • 4 piece Chicken scallop(s)
  • 75 g Flaked almonds
  • 1 packet Broccoli(s)
  • 4 brin Chives
  • 1 tablette Poultry stock
  • Olive oil
  • Salt
  • Pepper

Preparation (9 steps)

Prepare broccoli

Cut the broccoli florets into bite-sized pieces. Cook in a saucepan of boiling salted water according to package directions. Then drain and set aside.

Prepare chicken

Cut the chicken breast fillets into bite-sized cubes.

Fry chicken

Heat 1 tablespoon of olive oil in a large skillet. Fry the chicken cubes in it until they are browned all over.

Add stock

Dissolve the chicken stock tablet in 200 ml of hot water and add to the chicken in the pan.

Let chicken simmer

Let the chicken simmer over low heat for 10 minutes, uncovered, stirring occasionally.

Remove and season chicken

Remove the chicken from the pan with a slotted spoon, season with salt and pepper and set aside.

Reduce juice

Increase the heat and let the juice reduce in the pan until it thickens slightly.

Toast almonds

Toast the flaked almonds in a dry pan without fat until golden brown. Turn constantly so they don't burn.

Arrange

Put the chicken cubes and broccoli florets in a bowl. Pour over the reduced juice and sprinkle with the toasted flaked almonds and chopped chives. Serve immediately.
