Description

This recipe for halloumi guacamole toast with poached egg is a real eye-catcher on any brunch table! The combination of salty halloumi, creamy pea guacamole and the perfectly poached egg is simply irresistible. I especially like to make it when I have guests, as it can be prepared well in advance. The guacamole can be prepared in advance and the halloumi can also be prepared. A great dish for a relaxing weekend or a special occasion. If you like it a little spicier, you can sprinkle some chili flakes on top.

Ingredients (13 ingredients)

  • 1.5 l Water
  • 3 tbsp Vinegar
  • 2 piece Eggs (Gr. M)
  • 50 g Frozen peas
  • 4 Scheiben Bacon
  • 150 g Halloumi
  • 1 piece Avocado (small)
  • 1 tbsp Lemon juice
  • 1 pinch Salt
  • 1 pinch Pepper
  • 4 tbsp Sauce hollandaise
  • 1 piece Wheat toast rolls
  • 1 pinch Chili flakes

Preparation (7 steps)

Prepare water

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 1.5 l water and 3 tbsp vinegar to the mixing bowl and bring to the boil for 10 min./100°C/speed 1.

Poach eggs

Reduce heat. Crack eggs individually into a cup. Use a cooking spoon to stir a vortex into the water. Slide eggs one after the other into the simmering water in one go. Cook for 2–5 minutes (depending on the desired consistency). Remove with a slotted spoon.

Cook peas

Place 50 g frozen peas in the simmering basket and cook in the mixing bowl according to the package instructions. Then quench with cold water.

Prepare guacamole

Thermomix® Setting

Place cooked peas, 1 small avocado (halved, flesh removed), 1-2 tbsp lemon juice, salt and pepper in the mixing bowl and chop for 10 sec./speed 5. Push down with the spatula and puree for another 5 sec./speed 5. Season to taste.

Fry halloumi

Cut 150 g halloumi into slices and fry in a hot pan for 3–4 minutes, turning occasionally.

Heat Hollandaise

Thermomix® Setting
2 min/140°F/Speed 2 60

Add 4-6 tbsp sauce hollandaise to the mixing bowl and heat for 2 min./60°C/speed 2.

Prepare and top toast

Halve and toast 1 wheat toast roll. Spread halves with guacamole, top with 4 slices of bacon, halloumi and poached egg. Pour sauce over it. Sprinkle with chili flakes, salt and pepper.
