  • 100 g Hazelnuts
  • 300 g Dark chocolate couverture
  • 200 g Nut nougat paste
  • 200 g Heavy cream
  • 1.5 TL Gingerbread spice
  • 80 g Baking cocoa

Preparation (7 steps)

Chop the hazelnuts

Place 100 g of hazelnuts in the mixing bowl and chop for 5 sec./speed 5. Transfer to a bowl.

Prepare the couverture and nougat

Roughly chop 300 g of dark chocolate couverture and cut 200 g of nut nougat paste into pieces.

Heat the cream

3 min/194°F/Speed 1 90

Pour 200 g of heavy cream into the mixing bowl and heat for 3 min./90°C/speed 1.

Melt the couverture and nougat

Thermomix® Setting
2 min/122°F/Speed 2 50

Add the chopped couverture and the nougat pieces to the hot cream in the mixing bowl and stir for 2 min./50°C/speed 2 until everything is melted.

Mix in the nuts and spice

Thermomix® Setting
20 sec/Linkslauf Speed 2 Reverse

Add 1.5 tsp of gingerbread spice and the chopped hazelnuts to the mixing bowl and stir in for 20 sec./reverse/speed 2. Use the spatula to scrape down the sides.

Chill the chocolate mixture

Line a baking dish (approx. 25 x 20 x 5 cm) with baking paper and pour in the chocolate mixture. Smooth out and chill for about 3 hours.

Shape and coat the chocolates

Divide the chilled chocolate mixture into about 60 pieces, roll them into balls and coat them in 80 g of baking cocoa.
