Description

This hazelnut cake from the Thermomix® is a festive cake classic with ground hazelnuts, flour, and eggs. Preparation in the Thermomix® takes about 60 minutes, with an active working time of approximately 20 minutes. The recipe yields one cake portion. Ideal for coffee gatherings and special occasions.

Ingredients (11 ingredients)

  • 200 g ground hazelnuts
  • 220 g flour
  • 180 g sunflower oil
  • 4 piece eggs
  • 1 packet baking powder
  • 1 pinch salt
  • 130 g sugar
  • 1 packet vanilla sugar
  • 125 ml milk
  • hazelnut cake glaze
  • chopped hazelnuts

Preparation (9 steps)

Preheat oven and prepare pan

Preheat the oven to 180°C (350°F) top and bottom heat. Grease a loaf pan with butter and sprinkle with breadcrumbs.

Mix oil, sugar, and vanilla sugar

Place sunflower oil (or rapeseed oil), sugar, and vanilla sugar in the mixing bowl and mix for 3 minutes / speed 3.

Stir in egg yolks

Separate the eggs. Gradually add the egg yolks to the oil-sugar mixture and mix for 1 minute / speed 3.

Beat egg whites until stiff

In a separate bowl, beat the egg whites with a pinch of salt until stiff.

Mix flour, baking powder, and hazelnuts

Add flour and baking powder to the mixing bowl and mix for 10 seconds / speed 4. Add ground hazelnuts and mix for another 10 seconds / speed 4.

Combine dry and wet ingredients

Add the flour-hazelnut mixture and milk to the oil-sugar-egg yolk mixture in the mixing bowl and mix for 30 seconds / speed 3.

Fold in egg whites

Carefully fold the beaten egg whites into the batter.

Bake

Pour the batter into the prepared loaf pan and bake in the preheated oven for about 40-50 minutes.

Cool and decorate cake

Remove the cake from the pan and let it cool on a wire rack. Decorate with cake glaze and chopped hazelnuts.
