This hearty chicken and bean stew is a comforting and flavorful dish, perfect for a chilly evening. I've been making this recipe for years, and it's always a hit with my family. The combination of tender chicken, kidney beans, garbanzo beans, and navy beans, along with the subtle heat from the green chiles and chili powder, creates a delicious and satisfying meal. It's also great for meal prepping, as it tastes even better the next day! Feel free to adjust the amount of chili powder to your liking.

Ingredients (14 ingredients)

  • 1 tbsp vegetable oil
  • 1 cup diced yellow onion
  • 2 stalks celery, diced
  • 4 cups diced chicken
  • 3 cups chicken broth
  • 15 ounce can red kidney beans, undrained
  • 15 ounce can garbanzo beans, undrained
  • 15 ounce can navy beans, undrained
  • 4 ounce cans diced green chiles
  • 3 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp ground thyme
  • 1 tbsp garlic and herb seasoning blend
  • 1 tsp salt

Add chicken broth, red kidney beans (undrained), garbanzo beans (undrained), navy beans (undrained), diced green chiles, chili powder, ground cumin, ground thyme, garlic and herb seasoning blend, and salt to the mixing bowl. Cook for 30 min./100°C/Speed 1/Reverse.
