Description

These hearty dough sausages are a real eye-catcher at any party or cozy brunch! I always like to make them because they are so easy to prepare and taste super delicious. The combination of the spicy sausage and the fluffy dough coat is simply unbeatable. With a creamy mustard dip - perfect! The recipe is ideal if you are looking for something hearty to nibble on or need a quick lunch. Preparation with the Thermomix® is child's play and saves time. Try it out, you will be thrilled!

Ingredients (12 ingredients)

  • 15 g Chives
  • 100 g Rye flour
  • 100 g Wheat flour
  • 0.5 Pck. Dry yeast
  • 0.5 tsp Salt
  • 0.5 tsp Sugar
  • 4 tbsp Sunflower oil
  • 8 piece Sausages coarse (raw)
  • 200 g Flour for the work surface
  • 1 tsp Dijon Mustard
  • 1 Prise(n) Pepper
  • 1 tsp Honey

Preparation (9 steps)

Chop chives

Thermomix® Setting

Put 15 g of chives into the mixing bowl and chop for 3 sec./speed 8. Transfer and set aside.

Prepare dough

Thermomix® Setting
5 min/Kneading speed

Put 100 g rye flour, 100 g wheat flour, 0.5 pack of dry yeast, 0.5 tsp salt, 0.5 tsp sugar, the chopped chives, 4 tbsp sunflower oil and 100 ml lukewarm water into the mixing bowl and knead for 5 min./kneading setting to form a smooth dough.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl, cover and let rise in a warm place for 1 hour.

Prepare sausages

Prick 8 raw sausages all around with a fork. Fry in a pan with 2 tbsp oil until light brown on all sides. Let cool lukewarm.

Roll out and cut the dough

Preheat the oven to 200 °C top/bottom heat (180 °C convection). Knead the yeast dough and roll out into a rectangle on a floured work surface (with 200 g flour). Cut lengthways into approx. 8 equally wide strips.

Wrap the sausages

Wrap the yeast dough strips around the sausages. Place the rolls seam-side down on a baking sheet lined with baking paper. Let rise for another 10 minutes.

Bake dough sausages

Bake the sausage yeast rolls in the preheated oven for approx. 15 minutes until golden brown.

Prepare dip

While the dough sausages are baking, put 1 tsp mustard, 1 pinch of pepper and 1 tsp honey into the mixing bowl and stir for 10 sec./speed 3.

These hearty dough sausages are an absolute hit with our family when we want something hearty to nibble on. I still remember how my grandma used to bake them for birthdays. But without Thermomix®, that was a completely different story! She kneaded the dough by hand for hours and fried the sausages in a huge pan. With the Thermomix® the whole thing is of course much faster and easier, but the taste is still the same - simply delicious! The ingredients are deliberately kept simple, but each one plays an important role. The rye flour gives the dough a rustic, slightly nutty taste, while the wheat flour makes it nice and fluffy. The dry yeast is of course essential so that the dough rises nicely and the sausages later become nice and juicy. The chives bring a fresh, spicy note to the dough that harmonizes perfectly with the sausage. And of course salt and sugar must not be missing to round off the taste. The sausages themselves should be of good quality, preferably coarse sausages from the butcher. They give the dough sausages their hearty, spicy taste. When preparing with the Thermomix®, it is important that the water for the dough is lukewarm so that the yeast can work optimally. Make sure to let the dough rise for a sufficient amount of time after kneading so that it rises nicely. Piercing the sausages before frying prevents them from bursting. When rolling out the dough, it is helpful to generously sprinkle the work surface with flour so that the dough does not stick. The dough strips should not be too thin so that they enclose the sausages well. If you like it vegetarian, you can simply replace the sausages with vegetarian or vegan sausages. Tofu or seitan sausages are also ideal. For a vegan version, you can use agave syrup instead of honey in the dip. If you like it a little spicier, you can add some chili to the dough or dip. Other herbs such as rosemary or thyme also go well in the dough. The dough sausages taste best warm, straight from the oven. They are a great snack for parties, birthdays or just for in between. A creamy mustard dip, as described in the recipe, goes well with it, but ketchup, mayo or a herb curd are also delicious alternatives. A fresh salad or a few pickled cucumbers are suitable as a side dish. The baked dough sausages can be stored well. You can store them in an airtight container in the refrigerator and briefly warm them in the oven or microwave if necessary. You can also prepare the dough sausages by preparing the dough the day before and letting it rise in the refrigerator. The next day you can simply wrap the sausages and bake them. This saves time and you still have fresh, delicious dough sausages.
