About this recipe

This lasagna is a variation of a classic recipe that has been passed down in my family for generations. Originally, it was a very rich dish with lots of butter and cheese in the béchamel sauce. Over time, however, I have adapted it to make it a little lighter and still incredibly tasty. The Thermomix® has greatly simplified the preparation, especially the béchamel sauce, which always turns out perfectly. The secret to this lasagna lies in the quality of the ingredients. The ground meat should be of good quality, preferably mixed, as this makes it juicier. The tomato paste provides an intense tomato note in the ground meat sauce, which is wonderfully complemented by the herbs oregano, rosemary and marjoram. These herbs give the lasagna a Mediterranean touch and create a warm, aromatic flavor profile. The broth not only serves as a flavor enhancer, but also helps to keep the ground meat sauce juicy. The lasagna sheets form the base and should be of good quality so that they do not become too soft during baking. The milk is the basis for the béchamel sauce, which is thickened by the cornstarch. The mozzarella provides a nice crust and a mild, creamy taste. When preparing it in the Thermomix®, it is important to precisely observe the temperature and time in order to obtain a perfect béchamel sauce. Be sure to use the spatula while cooking to prevent the sauce from sticking to the bottom of the mixing bowl. When layering the lasagna, it is important to make sure that all the lasagna sheets are well covered with sauce so that they do not dry out during baking. For a vegetarian version, the ground meat can be replaced with lentils or soy granules. Vegan cheese can be used instead of mozzarella. There are no limits to your imagination when it comes to spices. Garlic, chili or paprika powder can be added to the ground meat sauce to give it an extra flavor. This lasagna tastes best when it comes fresh from the oven. It goes well with a fresh salad with a light vinegar-oil dressing. A glass of red wine rounds off the dish perfectly. The lasagna can easily be stored in the refrigerator. It will keep there for up to three days. To reheat, it can be heated either in the oven or in the microwave. The lasagna can also be prepared well in advance. It can be layered the day before and then stored in the refrigerator. Before baking, it should then stand at room temperature for about 30 minutes.
