Description

This hearty meat pot is a real traditional dish that warms you up especially in the cold season. The secret lies in the long braising time and the combination of pork and beef, bacon and root vegetables. The potatoes make the dish filling and the herbs provide an aromatic note. Perfect for a cozy family meal or a festive dinner with friends. Can be prepared well in advance and tastes almost even better when reheated!

Ingredients (19 ingredients)

  • 600 g Pork neck
  • 600 g Beef brisket or shoulder
  • 200 g Smoked bacon, streaky
  • 1 piece Pig's foot chopped by the butcher
  • 2 piece Onion(s)
  • 0.5 piece Celeriac
  • 2 clove Garlic clove(s)
  • 2 Blatt Bay leaves
  • 4 Zweig/e Thyme
  • 1 Flasche White wine, dry
  • 300 g Onion(s)
  • 400 g Leek
  • 200 g Carrot(s)
  • 800 g Potato(es)
  • 1 bunch Parsley
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 40 g Flour for the mold

Prepare onions, celery and garlic

Cut 2 onions, 0.5 celeriac and 2 cloves of garlic into coarse pieces and put in the mixing bowl. Chop for 5 sec./speed 5.

Prepare marinade

Thermomix® Setting
10 sec/Speed 4

Put 600 g pork neck, 600 g beef, 200 g bacon, 1 chopped pig's foot, 2 bay leaves and 4 sprigs of thyme in the mixing bowl. Add 1 bottle of white wine and mix for 10 sec./speed 4. Transfer the marinade to a bowl and let the meat soak in it overnight.

Prepare vegetables

Cut 300 g onions, 400 g leeks and 200 g carrots into slices. Peel 800 g potatoes and cut them into slices as well.

Layer meat and vegetables

Grease a Roman pot or a terrine dish with some lard. Remove the meat from the marinade and layer it alternately with the potatoes and vegetables in the dish. Sprinkle each layer with salt, pepper and chopped parsley.

Add marinade and seal

Pour the marinade over the meat and vegetables until everything is covered. Knead a dough from water and 40 g flour and seal the lid of the mold with it.

Braise in the oven

Place the sealed mold in the preheated oven at 180°C for 150 min. Then remove the lid and let it braise for another 20 min.
