Description

This hearty pointed cabbage potato casserole with ground meat is a substantial main course, ideal for the colder months. It is gluten-free and offers a filling meal for the whole family.   • 1 piece Onion
  • 2 Zehen Garlic
  • 600 g Pointed cabbage
  • 800 g Potatoes
  • 1 tbsp Olive oil
  • 400 g mixed ground meat
  • 2 tbsp Tomato paste
  • 200 g Cream
  • 100 ml Vegetable broth
  • 1 tbsp Soy sauce
  • 100 g grated Cheese
  • to taste Salt
  • to taste Pepper

Chop onion and garlic

Add 1 peeled and quartered onion and 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Prepare pointed cabbage

Clean 1 pointed cabbage (approx. 600 g) and cut into strips. Set aside.

Prepare potatoes

Peel 800 g potatoes and cut into cubes. Cook in a separate pot with salted water for 10 minutes. Drain and set aside.

Fry ground meat

Heat 1 tbsp olive oil in a large pan and fry 400 g mixed ground meat in it until crumbly. Add the chopped onion and garlic and fry briefly.

Roast tomato paste

Add 2 tbsp tomato paste to the ground meat and roast briefly.

Add pointed cabbage and liquids

Add the sliced pointed cabbage, 200 g cream and 100 ml vegetable broth to the ground meat in the pan.

Let simmer and season

Simmer everything for 5 minutes. Season with salt, pepper and 1 tbsp soy sauce.

Layer casserole

Place the cooked potato cubes and the pointed cabbage-ground meat mixture in a casserole dish and mix.

Add cheese and bake

Sprinkle 100 g grated cheese over the casserole. Bake in a preheated oven at 200 degrees top and bottom heat for about 20 minutes until the cheese is golden brown.

It's a meal that warms and nourishes, perfect for cold days. The ingredients are deliberately kept simple, but each plays an important role. The pointed cabbage, with its mild, slightly sweet taste, forms the base. It is more tender than white cabbage and goes perfectly with the earthy potatoes. These should be firm-cooking so that they do not fall apart during cooking and retain their shape in the casserole. The mixed ground meat provides the hearty component and provides the necessary satiety. Onion and garlic form the aromatic foundation, while tomato paste adds a light acidity and depth. The cream makes the casserole creamy and the vegetable broth provides the necessary moisture. A dash of soy sauce brings a surprising umami note into play, which rounds off the dish. And of course, the cheese should not be missing, which ensures a golden brown crust and additional flavor. The Thermomix® makes preparation much easier. First, onion and garlic are chopped in a flash, which saves time and tears. While the potatoes are pre-cooking in the pot, you can dedicate yourself to the ground meat. Frying in the pan is important to develop roasted aromas. The tomato paste should be briefly roasted to soften its acidity and intensify the flavor. When adding the pointed cabbage, it is important that it does not simmer for too long, otherwise it will become too soft. The soy sauce should be used sparingly as it is very salty. Tasting is the be-all and end-all here. For a vegetarian version, the ground meat can be replaced with lentils or soy granules. If you like it vegan, you can use a plant-based alternative instead of cream and omit the cheese or replace it with vegan grated cheese. You can vary the spices as you like. Caraway goes well with cabbage, paprika powder provides a smoky note and nutmeg harmonizes wonderfully with potatoes. The casserole is best served hot, straight from the oven. A fresh salad or a dollop of herb curd goes well with it. It can also be prepared well. You can layer it the day before and then bake it just before eating.
