Description

This creamy noodle casserole with tomatoes and mozzarella is an absolute comfort food! I love making it when I need something quick and the whole family needs to be full. The combination of the fruity tomato sauce, the al dente noodles and the melted mozzarella is simply unbeatable. I especially like it when you stir in fresh basil. The casserole is vegetarian and can be prepared very well. Perfect for a cozy evening or as lunch for the whole week!

Ingredients (14 ingredients)

  • 1 piece Onion
  • 2 clove Garlic
  • 1 piece Chili pepper, fresh
  • 400 g Cherry tomatoes
  • 50 g Parmesan
  • 125 g Mozzarella
  • 1 bunch Basil
  • 400 g Rigatoni or Penne
  • Olive oil
  • 500 g Tomatoes, strained
  • 200 ml Cream
  • Salt
  • Pepper, black
  • Sugar

Preparation (6 steps)

Chop onion, garlic and chili

Peel the onion and garlic and cut into coarse pieces. Remove the seeds from the chili pepper and also chop coarsely. Put everything together in the mixing bowl and chop for 3 sec./level 5. Use the spatula to push everything down from the edge.

Sauté vegetables

Add some olive oil to the mixing bowl and sauté the chopped onions, garlic and chili for 3 min./120°C/level 1.

Prepare tomato sauce

Add the strained tomatoes, the halved cherry tomatoes, salt, pepper and sugar to the mixing bowl and simmer for 10 min./100°C/level 1.

Grate Parmesan and refine sauce

Put the Parmesan in pieces into the mixing bowl and grate for 10 sec./level 8. Then add the cream and stir in for 2 min./90°C/level 2.

Add noodles and mozzarella

Add the cooked noodles, half of the diced mozzarella and half of the chopped basil to the mixing bowl and mix in for 1 min./reverse/level 1.

Gratinate casserole

Pour the noodle mixture into a casserole dish, sprinkle with the remaining mozzarella and bake in a preheated oven at 200°C top/bottom heat for about 20 minutes until golden brown.

About this recipe

This noodle casserole is a real hit in our house. I got it years ago from a friend who in turn had it from her Italian Nonna. Of course, I've adapted the recipe a bit over time, especially to optimize it for the Thermomix®. The original was more rustic, but the Thermomix® version is simply unbeatable when you need something quick. The ingredients are deliberately kept simple, but each one plays an important role. The onion and garlic form the aromatic base of the tomato sauce. The fresh chili pepper provides a pleasant spiciness that shouldn't be too dominant. If you like it milder, you can of course leave it out or only use a small part. The cherry tomatoes give the sauce a fruity sweetness and a nice texture. The Parmesan provides spice and umami, while the mozzarella melts wonderfully when baked and gives a creamy consistency. The basil brings a fresh, herbaceous note to the casserole. Rigatoni or Penne are my preferred types of pasta because they absorb the sauce well. When chopping the onion, garlic and chili in the Thermomix®, it is important not to mix for too long, otherwise they will become too fine and could burn when sautéing. The temperature of 120°C is ideal for developing the aromas without anything burning. When simmering the tomato sauce, make sure that the temperature is not too high, otherwise the sauce could splash. Grating the Parmesan in the Thermomix® is super easy and saves time. The cream makes the sauce nice and creamy, but you can also use Cremefine or plant-based cream alternatives. When mixing in the noodles, mozzarella and basil, the reverse direction is important so that the noodles do not break. The casserole can be varied wonderfully. For a vegan version, you can replace the Parmesan with nutritional yeast and the mozzarella with vegan cheese. Instead of basil, you can also use oregano, thyme or rosemary. If you like, you can also add other vegetables such as peppers, zucchini or eggplant. The casserole is best served warm, straight from the oven. A fresh salad or a piece of baguette goes well with it. But it is also a pleasure cold, for example as lunch on the go. The casserole can be prepared well. You can prepare it the day before and then store it in the refrigerator. Before baking, you should let it thaw a little. Leftovers can be stored in the refrigerator and reheated within 2-3 days.
