Description

This hearty potato-asparagus-vegetable tray with goat cheese is a vegetarian main course that is quick and easy to prepare in the Thermomix®. In addition to potatoes and green asparagus, cherry tomatoes and thyme provide Mediterranean flavors. In just 40 minutes, including 20 minutes of active work, a healthy and gluten-free dish for 2 servings is created. Ideal for light cuisine or as an uncomplicated family meal in spring.

Ingredients (12 ingredients)

  • 1 piece Garlic clove
  • 400 g Potatoes
  • 100 g Goat cheese - soft cheese
  • 2 tbsp Olive oil
  • 1 tsp dried Thyme
  • 200 g Green asparagus
  • 200 g Cherry tomatoes
  • to taste Salt
  • to taste Pepper
  • 2 tbsp White wine vinegar
  • 1 tbsp Olive oil
  • 1 tsp Honey

Preparation (10 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Place 1 garlic clove in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Prepare potatoes

Peel 400 g potatoes and cut into wedges. Place the potato wedges in a bowl.

Season potatoes

Add the chopped garlic clove, 1 tbsp olive oil, salt, pepper and 1 tsp dried thyme to the potato wedges in the bowl and mix well.

Bake potatoes

Spread the seasoned potato wedges on a baking sheet lined with baking paper and bake in a preheated oven at 180°C circulating air for 25 minutes. Turn once in between.

Prepare asparagus

In the meantime, remove the woody ends from the green asparagus (200 g) and halve the spears. Place the asparagus in a bowl.

Mix tomatoes and asparagus

Halve 200 g cherry tomatoes and add to the bowl together with the halved asparagus and the remaining olive oil (1 tbsp) and mix.

Bake asparagus and tomatoes

Add the asparagus and tomatoes to the potatoes on the baking sheet and bake for another 10 minutes.

Add goat cheese

Cut 100 g goat cheese (soft cheese) into small pieces and spread on the baking sheet. Bake everything again for 5 minutes until the cheese is lightly melted.

Prepare dressing

Thermomix® Setting

Put 2 tbsp white wine vinegar, 1 tbsp olive oil and 1 tsp honey in the mixing bowl and mix for 10 sec./speed 3. Season with salt and pepper.

Serve

Drizzle the potato-asparagus tray with the dressing and serve.
