Description

This hearty potato cake is an absolute delight! I especially like to make it in the fall when the potatoes are fresh from the field. The dough is nice and fluffy and the filling with potatoes, bacon and onions is simply irresistible. The addition of cream and eggs makes the filling particularly creamy. The cake is perfect for a cozy brunch with friends or as a hearty main course. A tip: It tastes best lukewarm!

Ingredients (12 ingredients)

  • 150 ml Whole milk
  • 25 g Yeast (fresh)
  • 1 tsp Sugar
  • 4 tbsp Butter
  • 250 g Wheat flour (Type 405)
  • to taste Salt
  • 600 g Potatoes
  • 150 g Bacon (cubes)
  • 2 piece Onions
  • 150 g Whipping cream
  • 2 piece Eggs (size M)
  • 1 Msp. Pepper

Preparation (8 steps)

Heat milk and activate yeast

2 min/99°F/Speed 1 37

Put 150 ml whole milk in the mixing bowl and heat for 2 min./37°C/speed 1. Add 25 g fresh yeast and 1 tsp sugar and mix for 20 sec./speed 2. Then let it rest in the mixing bowl for 5 minutes.

Prepare dough

Thermomix® Setting
2 min/122°F/Speed 1 50

Put 4 tbsp butter in the mixing bowl and melt for 2 min./50°C/speed 1. Add 250 g wheat flour, a pinch of salt and the yeast-milk mixture. Knead for 2 min./kneading setting to a smooth dough. Transfer the dough to a bowl, cover with a cloth and let rise in a warm place for about 45 minutes until the volume has doubled.

Cook and puree potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Peel 600 g potatoes, cut into cubes and place in the steaming basket. Fill 1 liter of water into the mixing bowl, insert the steaming basket and steam for 25 min./Varoma/speed 1. Then remove the steaming basket and put the potatoes in a bowl. Mash the potatoes into a fine puree with a potato masher and let cool slightly.

Prepare bacon and onions

Fry 150 g bacon cubes in a pan until crispy. Peel 2 onions, dice finely and add to the bacon in the pan. Fry until the onions are soft.

Prepare filling

Put the mashed potatoes in a large mixing bowl and mix with 150 g whipping cream, 2 eggs and the onion-bacon mixture. Season with salt and 1 pinch of pepper.

Preheat oven and prepare springform pan

Grease the springform pan with some butter and dust with some flour. Preheat oven to 200 °C top and bottom heat.

Cover the cake

Roll out the yeast dough on a lightly floured work surface a little larger than the springform pan. Lift the dough into the springform pan and pull up an edge. Then spread the potato mixture evenly on the dough.

Bake cake

Bake the potato cake in the preheated oven for about 35–40 minutes until the edge is crispy and the filling is golden brown. Then remove the cake from the oven, let it cool slightly, remove it from the mold and serve warm.
