Description

This hearty potato spinach casserole from the Thermomix® is a vegetarian main course with potatoes, spinach and a creamy sauce. The recipe is gluten-free and ideal for a hearty family meal.   • 1000 g firm-cooking potatoes
  • 1 piece Onion
  • 3 tbsp Butter
  • 3 tbsp Flour
  • 250 ml Vegetable broth
  • 250 ml Milk
  • 200 g Spinach
  • to taste Salt
  • to taste Pepper
  • 0.5 tsp Nutmeg
  • 100 g grated Cheese

Preparation (9 steps)

Prepare potatoes

Peel 1 kg firm-cooking potatoes and cut into small pieces. Place the potato pieces in a pot with cold, salted water. Bring to a boil and simmer for 10 minutes, then drain and set aside.

Preheat oven

Preheat the oven to 200 degrees top and bottom heat.

Chop onion

This hearty potato spinach casserole is a dish that has tradition in our family. My grandma always cooked it when the days got shorter and you needed something warming and hearty. She didn't prepare it in the Thermomix®, but I adapted her recipe to make it easier and faster to prepare without losing the original taste. The potatoes are the heart of this casserole. I recommend firm-cooking varieties such as Linda or Annabelle, as they retain their shape when cooked and do not become too floury. This ensures a pleasant texture in the casserole. The spinach brings a fresh, slightly tart note and of course lots of vitamins. I prefer to use fresh spinach, but frozen spinach also works well, just make sure to thaw and squeeze it out well beforehand so that the casserole doesn't get too watery. The onion forms the aromatic base for the sauce and is wonderfully sautéed in the butter in the Thermomix®. The roux, which we prepare in the Thermomix®, ensures the creamy consistency of the sauce. Vegetable broth and milk give the sauce flavor and liquid. Nutmeg, salt and pepper round it all off. The grated cheese, ideally Gouda or Emmental, provides a golden brown crust and a spicy taste. When preparing in the Thermomix®, it is important to adhere exactly to the temperatures and times to achieve an optimal result. Make sure that the onions do not become too dark, as they can otherwise taste bitter. When sautéing the onions and preparing the roux, it is important to keep an eye on the Thermomix® and adjust the time or temperature if necessary. When stirring in the spinach, be sure to use the reverse rotation so that the spinach is not chopped. For a vegetarian version, you can simply leave the casserole as it is. For a vegan version, you can replace the butter with margarine and the milk with plant-based milk (e.g. soy or oat milk). The cheese can be replaced with vegan cheese or nutritional yeast. If you like it a little spicier, you can add garlic, chili or paprika powder. Fresh herbs such as thyme or rosemary also go perfectly with this casserole. The potato spinach casserole is best served warm, straight from the oven. A fresh salad or a piece of bread goes well with it. It is a perfect dish for cold days and can also be prepared well in advance. The casserole can be stored in the refrigerator and reheated the next day. It is also good for freezing. If you want to prepare the casserole, you can prepare it up to the baking stage and then store it in the refrigerator. Before baking, you should let it stand at room temperature for about 30 minutes.
