Description

This roast pork is a real festive dish! The pork neck is wonderfully tender, braised in the oven, and the pepper sauce gives it a pleasant spiciness. It is served with delicious Spätzle with crunchy walnuts and fresh parsley. I like to make this recipe again and again because it tastes simply delicious and can be prepared well in advance. The carrots provide a nice sweetness and round off the dish perfectly. A hearty treat for the whole family!

Ingredients (14 ingredients)

  • 2 piece Onions
  • 2 kg Pork neck
  • to taste Salt
  • to taste Pepper
  • 3 tsp Sweet paprika powder
  • 3 tbsp Rapeseed oil
  • 400 ml Poultry stock
  • 800 g Carrots
  • 15 g Parsley (curly)
  • 3 tsp Green pepper (pickled)
  • 80 g Walnut kernels
  • 30 g Butter
  • 500 g Fresh egg spätzle
  • 250 ml Fine cooking cream

Preparation (9 steps)

Prepare onions

Cut onions into strips and spread on a deep baking sheet. Preheat oven to 200 °C top/bottom heat.

Sear meat

Season pork neck all over with salt, pepper and paprika powder. Heat 2 tablespoons of rapeseed oil in a pan and sear the meat in it on all sides. Place the meat on the onions and pour in the broth. Cook in the hot oven for 1 hour and 30 minutes.

Prepare carrots

Meanwhile, peel the carrots and cut diagonally into coarse pieces. Wash, shake dry and chop parsley. Roughly chop peppercorns. Roughly chop walnut kernels and roast in a pan, remove and let cool.

Sauté carrots

Thermomix® Setting
3 min/248°F/Speed 1 120

Put carrots in the mixing bowl, add 1 tablespoon of rapeseed oil and 10 g of butter and sauté for 3 min./120°C/level 1.

Cook carrots

10 min/212°F/Speed 1 100

Pour in 100 ml of water, add salt and cook for 10 min./100°C/level 1.

Fry spätzle

Fry spätzle in a pan with 20 g of butter until light yellow. Mix in walnuts and parsley.

Prepare sauce

30 sec/Speed 8

Remove roast from oven. Keep meat warm on a plate in the switched-off oven. Put roasting juices and onions in the mixing bowl and puree for 30 sec./level 8.

Refine sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add cooking cream and green pepper and bring to a boil for 5 min./100°C/level 2. Season with salt.

Cut meat into slices. Serve with carrots and spätzle.
