Description

This hearty scrambled egg with mushrooms and creamy mashed potatoes is a quick and filling dish, perfect for a relaxed lunch or a quick dinner. I like to make it when I need something quick, but still want something warm on the table. The fresh salad provides a nice balance. The dish is vegetarian and can be easily varied, for example with other vegetables or herbs. An absolute favorite recipe for quick cooking!

Ingredients (11 ingredients)

  • 1 piece Lettuce
  • 0.5 piece Cucumber
  • 100 g Cherry tomatoes
  • 1 tbsp Vinegar
  • 2 tbsp Oil
  • to taste Salt
  • to taste Pepper
  • 1 pack Mashed potatoes with milk
  • 4 piece Eggs (Gr. M)
  • 200 g Mushrooms
  • Chive rolls for sprinkling

Preparation (8 steps)

Prepare salad

Clean, wash and tear the lettuce into pieces. Wash, clean and slice the cucumber. Wash and halve the cherry tomatoes. Put everything in a bowl.

Prepare vinaigrette

Mix vinegar, 2 tablespoons of water and 1 tablespoon of oil in a small bowl, season with salt and pepper and pour over the salad. Mix well.

Heat water

Add 500 ml water to the mixing bowl and bring to the boil for 5 min./100°C/speed 1.

Prepare mashed potatoes

Thermomix® Setting
20 sec/Speed 3

Let the hot water cool for 1 minute, then add the mashed potato flakes with milk to the mixing bowl and mix for 20 sec./speed 3. Keep warm.

Prepare scrambled eggs

Whisk eggs and 6 tablespoons of water in a bowl, season with salt and pepper.

Fry mushrooms

Clean the mushrooms and cut into slices. Heat 1 tablespoon of oil in a coated pan. Fry the mushrooms in it, turning.

Prepare scrambled eggs

Pour eggs over the fried mushrooms and push together with a spatula until the scrambled eggs set.

Arrange and serve

Arrange mashed potatoes, scrambled eggs and salad on plates. Sprinkle with chives and serve.

It reminds me a bit of my childhood, when my grandma often put simple but lovingly prepared dishes on the table. The ingredients are deliberately kept simple, but each plays an important role. The mushrooms bring an earthy, slightly nutty taste to the game, which harmonizes wonderfully with the eggs. The eggs themselves provide the creamy texture of the scrambled eggs and provide valuable protein. The mashed potatoes, prepared with the Thermomix®, are incredibly creamy and form a great base for the dish. The fresh salad with cucumber and tomatoes provides a crunchy contrast and provides important vitamins. When preparing the mashed potatoes in the Thermomix®, it is important to let the water cool down briefly after boiling before adding the mashed potato flakes. This avoids lumps. Make sure to add the milk together with the flakes, which ensures the best consistency. When making scrambled eggs, it is important not to fry the eggs for too long, otherwise they will become dry. It is better to remove them from the stove a little earlier and let them set with the residual heat. The recipe can be varied wonderfully. For a vegetarian version, other vegetables such as peppers or zucchini can be added to the mushrooms. If you like it a little spicier, you can add garlic or chili. Fresh herbs such as parsley or thyme also go perfectly with scrambled eggs. For a vegan version, eggs can be replaced with tofu scramble and plant-based milk can be used for the mashed potatoes. Serve the scrambled eggs with mushrooms and mashed potatoes warm. A fresh salad is the ideal side dish, but a piece of bread or rolls also go well with it. If you like, you can sprinkle some grated cheese over the scrambled eggs. Leftovers of the scrambled eggs can be stored in the refrigerator and warmed up the next day.
