Description

These wild boar burgers are a real highlight for any barbecue! The wild boar meat from the neck, combined with pork shoulder and smoked bacon, results in an incredibly juicy and flavorful base.   • 800 g Wild boar meat from the neck
  • 300 g Pork shoulder
  • 150 g Belly bacon smoked
  • 2 piece Shallots
  • 2 piece Eggs
  • to taste Salt
  • to taste Pepper
  • to taste Rosemary
  • to taste Game spice
  • 100 g Cranberries
  • 150 g Crème fraîche
  • 2 piece Tomatoes
  • 3 piece Onions
  • Lamb's lettuce
  • Oil for frying
  • 6 piece Burger Buns

Prepare meat

Thermomix® Setting
15 sec/Speed 5

Cut 800 g wild boar meat from the neck, 300 g pork shoulder, 150 g smoked belly bacon and 2 shallots into coarse pieces and place in the mixing bowl. Chop for 15 sec./speed 5. If necessary, slide down with the spatula and repeat the process until the meat is finely chopped.

Prepare minced meat mixture

Thermomix® Setting
2 min/Speed 3

Add 2 eggs, salt, pepper, rosemary and game spice to the chopped meat in the mixing bowl. Mix for 2 min./speed 3 until a homogeneous mass is formed.

Cool minced meat

Remove the minced meat mixture from the mixing bowl, place in a bowl and refrigerate covered for 60 minutes.

Prepare cranberry dip

Thermomix® Setting
20 sec/Speed 3

Place 100 g cranberries and 150 g crème fraîche in the mixing bowl. Stir for 20 sec./speed 3. Season with salt and pepper.

Form burger patties

Remove the minced meat from the refrigerator and form 6 equal-sized burger patties. Press a small dimple into the center of each patty.

Prepare onions

Thermomix® Setting
3 sec/Speed 5

Peel 3 onions, halve and place in the mixing bowl. Chop for 3 sec./speed 5. Slide down with the spatula.

Sauté onions

Place the chopped onions and some oil in a pan and sauté over medium heat until golden brown.

Top burger

Top the burger buns as desired with cranberry dip, lamb's lettuce, tomato slices, the fried burger patties with Camembert and the roasted onions. Fix with a skewer.
