Description

This pumpkin soup with apple and small meatballs is a real comfort dish for the cold season! I especially like to make it in autumn when the pumpkin comes fresh from the field. The sweetness of the pumpkin and apple harmonizes wonderfully with the hearty meatballs. A dollop of crème fraîche and fresh chervil round off the whole thing perfectly. Preparation is super easy and quick with the Thermomix®. Try it out, you'll be thrilled!

Ingredients (17 ingredients)

  • 2 piece small Onions
  • 500 g Butternut squash pulp
  • 1 piece Carrot
  • 250 g floury Potatoes
  • 2 piece red-skinned Apples
  • 4 tbsp Oil
  • 1 l Vegetable broth
  • 300 g mixed ground Meat
  • 1 piece Egg (Gr. M)
  • 3 tbsp Breadcrumbs
  • Salt
  • Pepper
  • Sweet paprika
  • Cinnamon
  • 6 Stiele Chervil
  • Nutmeg
  • 4 tbsp Crème fraîche

Preparation (10 steps)

Chop onions

Peel and quarter 2 small onions and place in the mixing bowl. Chop 3 sec./speed 5.

Sauté onions

Add 2 tbsp oil to the onions in the mixing bowl and sauté 3 min./120°C/speed 1.

Prepare and add vegetables

Peel, dice and place 500 g butternut squash pulp in the mixing bowl. Peel, chop and add 1 carrot and 250 g floury potatoes to the mixing bowl. Peel, quarter, core, dice and add 1 red-skinned apple.

Sauté vegetables

Sauté the vegetables in the mixing bowl for 3 min./120°C/speed 1.

Cook soup

Add 1 l vegetable broth to the mixing bowl and cook for 25 min./100°C/speed 1.

Prepare meatballs

Knead 300 g mixed ground meat, remaining onion, 1 egg (Gr. M), 3 tbsp breadcrumbs, salt, pepper, sweet paprika and some cinnamon in a bowl. Form small balls from it.

Fry meatballs

Heat 2 tbsp oil in a pan and fry the meatballs in it for about 10 minutes all around.

Puree the soup in the mixing bowl for 30 sec./speed 10.

Season the soup with salt, pepper and nutmeg and heat for 2 min./90°C/speed 1.

Arrange

Wash, quarter, core and cut 1 apple into thin slices. Wash chervil, pluck leaves. Divide the soup with the meatballs among 4 soup plates and arrange with 1 tbsp crème fraîche each. Drizzle with frying oil. Garnish with apple slices and chervil.
