Description

These chickpea empanadas are a delicious bite and perfect for any occasion. The dough, made at home, is crispy and the filling, creamy and full of flavor, thanks to the chickpeas, red pepper, garlic and spices. I often prepare them for parties or as a quick and healthy snack. Turmeric gives it a special touch and a beautiful golden color. They are ideal for vegetarians and children love them. They can be served cold or hot, they are always a success! Preparation is simple and with the Thermomix® it is even easier.

Ingredients (12 ingredients)

  • 12 piece empanada dough discs
  • 2 can chickpeas
  • 1 clove garlic
  • 0.5 piece red pepper
  • 1 piece spring onion
  • salt
  • pepper
  • turmeric
  • 1 cucharada sopera oil
  • 1.5 cup flour
  • 0.5 cup water
  • 2 cucharadas soperas oil

Preparation (10 steps)

Dough preparation

Place 1 ½ cups of flour in the Thermomix bowl. Add ½ cup of water, 2 tablespoons of oil and salt to taste.

Knead the dough

Knead all the ingredients in the Thermomix for 2 Min./kneading setting.

Rest the dough

Remove the dough from the Thermomix, form a smooth and soft ball. Cover with a dish towel and let rest at room temperature for 30 minutes.

Filling preparation

Place 1 clove of garlic in the Thermomix bowl and chop 3 Sec./Speed 7.

Add the pepper and onion

Thermomix® Setting
4 Seg./Speed 5

Add ½ red pepper and 1 spring onion to the bowl and chop 4 Sec./Speed 5.

Sauté the vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tablespoon of oil to the bowl and sauté the vegetables for 3 Min./120°C/Speed 1.

Add the chickpeas and spices

Thermomix® Setting
5 min/212°F/Speed 2 100 Reverse

Add 2 cans of drained chickpeas, salt, pepper and turmeric to taste to the bowl. Cook for 5 Min./100°C/Speed 2/Reverse.

Chop the filling

Thermomix® Setting

Chop the filling for 10 Sec./Speed 5.

Empanada assembly

After the resting time, stretch the dough to about 3 or 4 mm. Cut with empanada cutter. If you don't have one, you can use a glass or jar to do it. Fill each empanada dough disc with the chickpea mixture.

Bake the empanadas

Preheat the oven to 180°C. Place the empanadas on a baking sheet and bake for 20 minutes or until golden brown.
