Description

This recipe combines two delicious dips: Pink Hummus and Baba Ganoush. The Pink Hummus is prepared with cauliflower, chickpeas and beetroot, while the Baba Ganoush consists of roasted eggplant, tahini and lemon juice. Both dips are vegetarian, gluten-free and ideal as an appetizer or finger food. The preparation takes about 55 minutes.

Ingredients (12 ingredients)

  • 0.25 Stück Cauliflower
  • 250 g Chickpeas
  • 2 EL Lemon juice
  • 0.5 Stück small Garlic clove
  • 3 EL Tahini
  • 0.25 TL Salt
  • 2 EL Water
  • 100 g Cooked beetroot
  • 300 g Eggplant
  • 1 Stück small Garlic clove
  • 2 EL Tahini
  • 2 TL Lemon juice

Preparation (10 steps)

Prepare cauliflower

Preheat the oven to 200 °C.

Roast cauliflower

Divide 125 g cauliflower into small pieces, rub with olive oil and season with Zataar and salt. Roast in the middle of the oven for 10-15 minutes until browned.

Prepare hummus

Thermomix® Setting
30 sec/Speed 8

Put 250 g chickpeas, 2 tbsp lemon juice, 0.5 small garlic clove, 3 tbsp tahini, 0.25 tsp salt and 100 g cooked beetroot in the mixing bowl and puree for 30 sec/speed 8. Add 2-4 tbsp water and puree for another 10 sec/speed 8 until a creamy mass is formed.

Finish hummus

Arrange the hummus in a bowl.

Arrange hummus

Arrange the roasted cauliflower, some chickpeas and the parsley on the hummus. Serve with pita bread (recipe p. 30), olive oil and fresh lemon!

Preheat oven (Baba Ganoush)

Preheat the oven to 200 °C.

Prepare and roast eggplant

Halve 300 g eggplant and cut into the inside with a knife (small crosses). Place on a baking sheet lined with baking paper, drizzle with olive oil and roast in the middle of the oven for 30-40 minutes until the pulp is soft.

Cool down eggplant and remove pulp

Let the eggplant cool down. Then scrape the pulp out of the shell with a spoon.

Prepare Baba Ganoush

Put the pulp of the eggplant, 1 small garlic clove, 2 tbsp tahini and 2 tsp lemon juice in the mixing bowl and puree for 20 sec/speed 8. Season with salt and a knife tip of cumin.

Serve Baba Ganoush

Serve with freshly cut vegetables (for example carrots or cucumbers).
