Description

This hearty white cabbage salad with crispy bacon and pretzel bread is a real Bavarian classic that goes particularly well with hearty snacks or as a side dish for grilling. I like to make it in the fall when the white cabbage comes fresh from the field. The salad is quick to prepare and tastes best when it has been left to sit for a while. The combination of the crunchy cabbage, the salty bacon and the pretzel bread is simply unbeatable! If you like, you can add some caraway seeds.

Ingredients (11 ingredients)

  • 1 pack Pretzel bread
  • 125 g Breakfast bacon
  • 1 kg White cabbage
  • 1 piece Red pepper
  • 1 bunch Spring onions
  • 2 tbsp Sugar
  • 8 tbsp Fruit vinegar
  • 6 tbsp Oil
  • 1 tbsp Salt
  • to taste Pepper
  • 1 tsp Caraway seeds

Preparation (4 steps)

Prepare white cabbage

5 sec/Speed 4

Quarter the white cabbage, remove the stalk and put the cabbage leaves in the mixing bowl. Chop for 5 sec./level 4. Transfer and set aside.

Chop peppers and spring onions

Thermomix® Setting
3 sec/Speed 5

Quarter the peppers, core them and put them in the mixing bowl together with the spring onions. Chop for 3 sec./level 5. Add to the white cabbage.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Put sugar, fruit vinegar, oil, salt, pepper and caraway seeds in the mixing bowl and stir for 20 sec./level 3.

Mix salad

Pour the dressing over the white cabbage, peppers and spring onions and knead well with your hands. Let the salad sit for about 30 minutes.
