Description

This spelt salad is a fresh and nutritious summer dish, perfect for a light lunch or an outdoor picnic. Pearled spelt, rich in fiber, goes perfectly with the sweetness of peppers, the delicacy of zucchini and the earthy flavor of button mushrooms. Cherry tomatoes add a touch of acidity that balances everything. Preparing this salad is very simple thanks to the Thermomix®, which helps us cook the spelt and sauté the vegetables quickly and evenly. A pinch of chilli pepper and fresh parsley complete the dish, making it irresistible. Ideal for those looking for a healthy and tasty alternative to the usual salads.

Ingredients (11 ingredients)

  • 250 g Pearled spelt
  • 1 piece Pepper
  • 1 piece Zucchini
  • 200 g Button mushrooms
  • 200 g Cherry tomatoes
  • 0.5 piece Lemon (juice)
  • 1 bunch Parsley
  • 1 pinch Chili powder
  • 1 pinch Fine salt
  • 30 ml Extra virgin olive oil
  • 1000 ml Water

Preparation (6 steps)

Cook the spelt

Thermomix® Setting
25 min/212°F/Speed 4 100

Pour 1 liter of water into the bowl. Place the basket and pour 250g of pearled spelt into the basket. Add a pinch of salt. Cook for 25 Min./100°C/Stufe 4.

Drain and cool the spelt

At the end of cooking, remove the basket with the help of the spatula and drain the spelt. Transfer the spelt to a large bowl and let it cool completely.

Prepare the vegetables

Wash and dice 1 pepper. Wash and dice 1 zucchini. Clean and slice 200g of button mushrooms. Wash and halve or quarter 200g of cherry tomatoes.

Sauté the vegetables

Thermomix® Setting
15 min/248°F/Speed 1 120 Reverse

Pour 30 ml of extra virgin olive oil into the bowl. Add the peppers, zucchini, mushrooms and a pinch of salt. Cook for 15 Min./120°C/Stufe 1/Linkslauf.

Combine the vegetables with the spelt

Pour the cooked vegetables into the bowl with the cooled spelt. Add the cherry tomatoes, the juice of half a lemon and mix gently.

Season and serve

Add a pinch of chili powder, a bunch of chopped parsley and a drizzle of extra virgin olive oil. Mix well and serve the spelt salad.
