Description

This colorful pasta salad in a jar is a real eye-catcher and tastes simply fantastic! I especially like to make it for picnics or barbecues because it can be prepared so well in advance. The combination of elbow macaroni, red lentils, crunchy green beans and the slightly sour dressing is simply unbeatable. The yogurt makes the dressing nice and light and fresh. If you like, you can add some fresh parsley or chives. A great recipe that is guaranteed to be a hit!

Ingredients (14 ingredients)

  • 8 piece Jars (of 500 ml each)
  • 175 g Elbow macaroni
  • 0.5 pinch Salt
  • 150 g Red lentils
  • 300 g Green beans
  • 250 g Pickled gherkins (jar)
  • 200 g Radicchio
  • 2 Beete Cress
  • 400 g Whole milk yogurt
  • 2 tsp Horseradish (jar)
  • 2 tsp Mustard
  • 3 tbsp Olive oil
  • 3 tbsp Light balsamic vinegar
  • 0.5 pinch Pepper

Preparation (8 steps)

Cook pasta

Thermomix® Setting
12 min/212°F/Speed 1 100

Put 175 g elbow macaroni, a pinch of salt and 1000 ml water into the mixing bowl and cook for 12 Min./100°C/speed 1. Then pour into a sieve and rinse with cold water. Set noodles aside.

Cook lentils

Thermomix® Setting
8 min/212°F/Speed 1 100

Put 150 g red lentils, a pinch of salt and 500 ml water into the mixing bowl and cook for 8 Min./100°C/speed 1. Then pour into a sieve and rinse with cold water. Set lentils aside.

Cook beans

Thermomix® Setting
10 min/212°F/Speed 1 100

Wash, clean and cut 300 g green beans into thirds. Put beans, a pinch of salt and 500 ml water into the mixing bowl and cook for 10 Min./100°C/speed 1. Then pour into a sieve and rinse with cold water. Set beans aside.

Prepare pickled gherkins

Finely dice 250 g pickled gherkins (jar) and set aside.

Prepare radicchio

Wash 1 radicchio (approx. 200 g), quarter and cut into thin strips from the stalk. Set radicchio aside.

Prepare cress

Cut 2 beds of cress from the bed and set aside.

Prepare dressing

Put 400 g whole milk yogurt, 2 tsp horseradish (jar), 2 tsp mustard, 3 tbsp olive oil, 3-4 tbsp light balsamic vinegar, salt and pepper into the mixing bowl and mix for 20 sec./speed 3.

Layer salad

Distribute the dressing evenly among 8 jars (of 500 ml each). Then layer the prepared salad ingredients (pasta, lentils, beans, pickled gherkins, radicchio and cress) on top. Do not layer the jars too full! Close jars.
