Description

This pasta salad is a real hit for any barbecue or a quick lunch! I especially like to make it in the summer when the ingredients come fresh from the market. The combination of tortellini, crunchy vegetables and savory ham is simply unbeatable. The dressing with sour cream and a hint of vinegar makes the salad nice and creamy and spicy. If you like, you can add some fresh herbs. The salad can be prepared very well and tastes delicious even the next day!

Ingredients (12 ingredients)

  • 500 g Tortellini
  • 3 piece Spring onions
  • 250 g Cherry tomatoes
  • 1 piece Cucumber
  • 200 g Cooked ham
  • 100 g Gouda
  • 150 g Salad cream
  • 150 g Sour cream
  • 1 tbsp White wine vinegar
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Cook tortellini

Cook 500g tortellini in salted water according to package directions. Then drain and let cool.

Prepare spring onions

Clean 3 spring onions and cut into fine rings.

Prepare tomatoes and cucumber

Halve 250g cherry tomatoes. Peel, core and cut 1 cucumber into small pieces.

Prepare ham and cheese

Cut 200g cooked ham and 100g Gouda into small cubes.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Put 150g salad cream, 150g sour cream or crème fraîche, 1 tbsp white wine vinegar, 2 tbsp olive oil, salt and pepper in the mixing bowl and stir for 20 sec./speed 3.

Mix salad

Place the cooled tortellini, spring onions, cherry tomatoes, cucumber, cooked ham and Gouda in a large bowl. Pour the dressing over it and mix everything well.

This pasta salad is more than just a recipe for me; it is a reminder of carefree summer afternoons in my grandmother's garden. She always had a huge vegetable garden, and this salad was her way of combining the freshest ingredients into a simple but incredibly delicious dish. Of course, she didn't prepare it in the Thermomix®, but I took her basic idea and adapted it to my modern kitchen. The tortellini form the basis of the salad. I prefer tortellini with cheese filling, as they contribute a nice creaminess and a mild flavor that goes well with the other ingredients. It is important to cool the tortellini well after cooking so that they do not become mushy. The spring onions bring a pleasant spiciness and freshness to the salad. The cherry tomatoes provide sweetness and juiciness, while the cucumber contributes a crunchy texture and a refreshing taste. The cooked ham gives the salad a savory note and a certain spiciness. The Gouda, cut into small cubes, provides an additional creamy texture and a mild, nutty flavor. The Thermomix® makes preparing the dressing child's play. The salad cream forms the base and provides the necessary creaminess. The sour cream or crème fraîche gives the dressing a slightly sour note that harmonizes perfectly with the other ingredients. The white wine vinegar brings an additional acidity and spiciness, while the olive oil ensures a smooth consistency. Salt and pepper should of course not be missing to taste the dressing. In the Thermomix®, simply put all the ingredients in the mixing bowl and stir briefly until a creamy dressing is created. For a vegetarian version, you can simply omit the cooked ham or replace it with smoked tofu. For a vegan version, you can use vegan tortellini and replace the salad cream and sour cream with vegan alternatives. Instead of Gouda, you can use vegan cheese or omit it altogether. If you like it a little spicier, you can add some chili or Tabasco to the dressing. Fresh herbs such as parsley, chives or dill also go perfectly with this salad. Serve the pasta salad as a side dish to grilled food, as a light lunch or as a snack in between. It goes well with grilled meat, fish or vegetables. A fresh baguette or ciabatta is the perfect addition. The pasta salad can be prepared well and tastes delicious even the next day. Keep it in the refrigerator. If you prepare the salad, add the dressing just before serving so that the ingredients do not become too soft. This keeps the salad crunchy and fresh.
