Description

This roasted bell pepper salad is a vibrant and flavorful dish, perfect as a side or light meal. Roasting the peppers brings out their natural sweetness, which is beautifully complemented by the sharpness of red onion and the freshness of diced tomato. I've been making this salad for years, and it's always a hit at summer barbecues. It's incredibly easy to prepare, especially with the Thermomix®, and the flavors meld together beautifully as it sits. This salad is naturally vegetarian and gluten-free, making it a great option for various dietary needs. Feel free to add a pinch of chili flakes for a little extra heat!

Ingredients (7 ingredients)

  • 3 piece green bell peppers
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped red onion
  • 1 clove garlic, minced
  • salt
  • pepper
  • 1 piece roma (plum) tomato, diced

Preparation (5 steps)

Roasting the Bell Peppers

Preheat an oven to 450 degrees F (230 degrees C). Place the whole bell peppers on aluminum foil. Bake until the skin is spotted black and the peppers are soft, 30 to 45 minutes, turning the peppers once if necessary. Remove peppers from the oven and set aside to cool for 10 minutes.

Preparing the Roasted Peppers

Peel off the skin and remove the stem and seeds from the cooled bell peppers. Chop the roasted peppers into half-inch pieces and set aside.

Chopping Red Onion

Place 1 tablespoon of finely chopped red onion into the mixing bowl and chop for 3 seconds / speed 5.

Sautéing Onion and Garlic

Add 1 tablespoon of olive oil and 1 clove of minced garlic to the mixing bowl. Sauté for 3 minutes / 120°C / speed 1.

Combining Ingredients

Add the chopped roasted bell peppers, diced 1 roma (plum) tomato, salt, and pepper to taste to the mixing bowl. Cook for 5 minutes / 100°C / speed 1, stirring occasionally using the spatula to ensure even cooking.
