Description

This chicken salad is an explosion of freshness and flavors! Perfect for hot summer days, it combines the lightness of romaine lettuce and arugula with the sweetness of peppers and pomegranate. The chicken, boiled and cut into small pieces, goes perfectly with the mustard vinaigrette, which gives a touch of liveliness. I often prepare it for a quick and tasty lunch, or for an outdoor picnic. A tip? Add a few fresh mint leaves for an even more intense aroma! It is a dish that is prepared in a short time and that will appeal to everyone, young and old.

Ingredients (12 ingredients)

  • 500 g Chicken
  • 1 piece Romaine lettuce
  • 2 gambi Celery
  • 1 piece Yellow bell pepper
  • 1 piece Red bell pepper
  • 1 piece Fennel
  • 0.5 piece Lime (juice)
  • 50 g Arugula
  • 1 pinch Salt
  • 0.5 piece Pomegranate (seeds)
  • 4 tbsp Extra virgin olive oil
  • 2 tsp Mustard

Preparation (8 steps)

Chicken cooking

Thermomix® Setting
35 min/212°F/Speed 1 100

Insert plenty of salted water into the bowl. Place the chicken in the basket and cook for 35 Min./100°C/Level 1. At the end, remove the chicken, debone it and cut it into small pieces.

Preparation of the peppers

Wash the yellow and red peppers, remove the seeds and white filaments. Cut them into thin strips.

Preparation of the fennel

Wash the fennel, cut it in half and slice it thinly.

Preparation of the celery

Wash the celery thoroughly and slice it thinly.

Preparation of the salad

Wash the romaine lettuce and cut it into strips.

Sauce emulsification

Thermomix® Setting
10 sec/Speed 3

In the bowl, pour the extra virgin olive oil and mustard. Mix for 10 Sek./Level 3.

Salad dressing

In a large bowl, combine all the prepared vegetables. Pour the oil and mustard emulsion over the vegetables. Add the juice of half a lime and mix gently.

Assembly and garnish

Distribute the seasoned vegetables on a serving dish. Place the chicken pieces on top and cover with fresh arugula. Season with salt to taste. Distribute the pomegranate seeds over the salad.
