Description

This octopus salad is a summer delight that I often prepare for aperitifs with friends. The octopus, very tender after perfect cooking, goes wonderfully with the freshness of the parsley, the intensity of the garlic and the acidity of the lemon. It is a simple recipe, but which requires a little patience for the preparation of the octopus. I advise you to prepare it in advance so that the flavors mix well in the refrigerator. A real treat for the taste buds, perfect for a light and tasty meal! Feel free to add some black olives for an extra Mediterranean touch.

Ingredients (5 ingredients)

  • 1 kg of octopus
  • 20 g of chopped parsley
  • 2 clove of minced garlic
  • Olive oil
  • 1 piece lemon (juice)

Cleaning the octopus

Clean the octopus properly under running water. Make sure to remove any traces of sand or impurities.

Separation and preparation of the octopus

Separate the head from the tentacles. Turn the head over and remove the organs. Extract the beak in the middle of the tentacles. Remove the eyes.

Cooking the octopus

Thermomix® Setting

Put the octopus in the Thermomix bowl. Cover it with water. Program 40 Min./Varoma/Stufe 1.

Draining and post-cooking cleaning

Drain the octopus in a colander. Clean under running water, removing anything that comes off easily.

Cutting the octopus

Cut the octopus into small pieces on a cutting board.

Chop the garlic

Thermomix® Setting

Put the 2 cloves of garlic in the Thermomix bowl and chop 3 Sek./Stufe 7.

Salad preparation

In a salad bowl, add the olive oil, minced garlic, chopped parsley, lemon juice, salt, pepper and pieces of octopus. Mix gently.

Refrigeration

Put cling film on the salad bowl and refrigerate for at least 1 hour so that the flavors mix.
