Description

This tomato-zucchini salad with tuna is an absolute summer classic! I especially like to make it when the tomatoes and zucchini come from my own garden - then it simply tastes unbeatable. The tuna provides an extra portion of protein and makes the salad a complete meal. With a fresh dressing of olive oil, vinegar and herbs, it is quick to prepare and tastes wonderfully light and refreshing. Perfect for a quick lunch or as a side dish for grilling. If you like, you can add some corn or cucumber.

Ingredients (13 ingredients)

  • 200 g Tomato(es)
  • 1 große Onion(s)
  • 1 piece Bell pepper(s) green
  • 2 kleine Zucchini
  • 150 g Peas cooked
  • 1 can Tuna
  • 5 tbsp Olive oil
  • 3 tbsp Vinegar
  • to taste Salt
  • to taste Pepper white
  • 0.5 tsp Anchovy paste
  • 1 Prise(n) Basil
  • 1 Prise(n) Marjoram

Preparation (5 steps)

Prepare tomatoes, onion, bell pepper and zucchini

Wash 200 g tomatoes and dice coarsely. Peel and halve 1 large onion. Clean and halve 1 green bell pepper. Wash and halve 2 small zucchini.

Chop vegetables

Thermomix® Setting
4 sec/Speed 4

Place the halved onions in the mixing bowl and chop for 3 sec./level 5. Add the halved peppers and zucchini and chop for 4 sec./level 4.

Mix salad

Place the chopped vegetables together with the diced tomatoes, 150 g cooked peas and 1 can of tuna (drained and shredded) in a bowl and mix.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Place 5 tbsp olive oil, 3 tbsp vinegar, salt, white pepper, 0.5 tsp anchovy paste, 1 pinch basil and 1 pinch marjoram in the mixing bowl and stir for 10 sec./level 3.

Dress salad

Pour the marinade over the salad and mix well. Serve the salad immediately.
