Description

This Greek salad is a real ray of sunshine on a plate! I often prepare it in the summer, when the vegetables are bursting with sunshine and full of flavour. The combination of the freshness of the romaine and cucumber, with the sweetness of the tomatoes and the character of the feta, is simply irresistible. A drizzle of olive oil, a little lemon juice, and you're done! It's a perfect salad for a light lunch, a picnic or a tasty accompaniment to a barbecue. And the little extra? It's ready in no time!

Ingredients (15 ingredients)

  • 1 piece red onion
  • 0.5 piece romaine lettuce
  • 0.5 piece cucumber
  • 1 piece green pepper
  • 2 piece large tomatoes
  • 8 piece stoned black olives
  • 100 g feta (Greek cheese)
  • 1 ou 2 c. à soupe chopped parsley
  • 4 c. à soupe olive oil
  • 2 c. à soupe lemon juice
  • 1 clove crushed garlic
  • 1 pinch salt
  • 0.5 c. à café dried oregano
  • 0.5 c. à café liquid honey
  • 1 pinch pepper

Preparation of red onions

Peel the red onion and cut it into rings. Put the onion rings in the Thermomix cooking basket.

Blanching the red onions

Thermomix® Setting
3 min/212°F/Speed 1 100

Pour 500 ml of water into the Thermomix bowl. Insert the cooking basket with the red onions. Cook 3 Min./100°C/Stufe 1 to soften the onions.

Cooling the onions

Remove the cooking basket with the red onions and rinse them immediately in cold water. Drain and set aside in a bowl.

Preparation of the sauce

Put the olive oil, lemon juice, crushed garlic, salt, dried oregano, liquid honey and pepper in the Thermomix bowl.

Mixing the sauce

Mix the sauce 10 Sek./Stufe 3 in the Thermomix.

Maceration of onions

Pour 2 tablespoons of sauce over the onion. Mix and let macerate for at least 10 minutes.

Preparation of vegetables

Wash and peel the cucumber, pepper and tomatoes. Cut the cucumber, pepper and tomatoes into thin slices.

Preparation of the salad

Wash and cut the romaine leaves into pieces. Put the romaine leaves in a salad bowl or on plates.

Assembling the salad

Arrange the cucumber, pepper, tomatoes and onion rings on the romaine lettuce.

Adding olives and feta

Cut the olives into slices and crumble the cheese. Add the olives and cheese to the salad.

Chopping the parsley

Put the parsley in the Thermomix bowl and chop 3 Sek./Stufe 5.

Finalizing the salad

Sprinkle the salad with chopped parsley and drizzle with the remaining sauce.
