Description

These chicken rolls with brandy pears are a dish I often prepare when I want something special but not too complicated. The sweetness of the pears, lightly marinated and wrapped in the chicken breast, goes perfectly with the decisive flavor of the brandy. The touch of Parmesan cheese and nutmeg adds an irresistible aroma. Perfect for a dinner with friends or a special occasion, these rolls are an explosion of autumn flavors.   • Chicken breast
  • Pears
  • Brandy
  • White wine
  • Extra virgin olive oil
  • Butter
  • Parmigiano Reggiano
  • Flour
  • Salt
  • to taste Nutmeg
  • Black pepper
  • 50 ml Water

Preparation (9 steps)

Preparation of the pears

Peel the pears, divide them into four wedges and remove the core. Put the wedges on a plate.

Marinating the pears

Sprinkle the pear wedges with a pinch of salt, a grating of nutmeg and grated Parmesan cheese. If desired, add a grind of black pepper. Cover and let marinate for 10 minutes.

Preparation of the chicken

Separate the chicken breasts and flatten them well with a meat tenderizer, being careful not to break them.

Filling and closing the rolls

In the center of each chicken breast, put a pear wedge with its dressing. Wrap the meat and secure it with a wooden toothpick or kitchen twine. For added security, close with the toothpick and secure with the twine.

Browning the rolls

Salt the rolls externally, flour them and brown them in a pan where you have heated butter and extra virgin olive oil. This step is not carried out in the Thermomix.

Cooking with white wine

Sprinkle the rolls with white wine and cook over medium heat until it has evaporated. This step is not carried out in the Thermomix.

Adding the brandy

Pour the brandy over the rolls, mix, immediately turn off the heat, cover and let the preparation rest for about 5 minutes. This step is not carried out in the Thermomix.

Preparation of the cooking sauce

Thermomix® Setting

Transfer the cooking sauce from the pan to the Thermomix bowl. Add 50 ml of water and cook for 3 Min./100°C/Stufe 2.

Serve the rolls drizzled with their cooking sauce.
