Description

These porcini mushroom chicken rolls are a flavorful and easy-to-prepare main course, perfect for an autumnal dinner. The combination of tender chicken with the creamy mushroom filling and crispy bacon is simply delicious. I often prepare them when I have dinner guests because they are always a success. The preparation is quite quick, especially if you use dried porcini mushrooms, which give an intense flavor to the filling. They can be served with a side of baked potatoes or a mixed salad. A dish that warms the heart and delights the palate!

Ingredients (4 ingredients)

  • Chicken breast
  • Dried porcini mushrooms
  • Smoked bacon
  • Salt

Preparation (8 steps)

Rehydration of dried porcini mushrooms

Put the dried porcini mushrooms in a bowl with lukewarm water and let them soak for about 15 minutes, until they have softened.

Preparation of the chicken breast

Clean the chicken breast by removing the central bone and dividing it in half. Open each half like a book and gently pound it with a meat mallet to widen it well.

Trimming the chicken breast

Trim the beaten chicken breast to obtain a regular rectangle. Save the meat scraps.

Preparation of the filling

Drain and squeeze the softened porcini mushrooms well. Transfer the mushrooms to the bowl together with the meat scraps, salt and pepper. Chop finely: 10 Sec./Stufe 7.

Filling and rolling

Spread out the rectangle of chicken breast and arrange the filling on the longest side. Roll up the chicken breast tightly.

Coating with bacon

Arrange the slices of smoked bacon on baking paper, slightly overlapping for the longest side, to form a sort of bed. Cover the chicken roll with the bacon and tie it with kitchen twine.

Baking in the oven

Bake in a preheated oven at 180°C for 17 minutes.

Removal of twine and slicing

Remove the twine and slice the chicken roll. Serve hot.
