Description

This beef fillet with flavored porcini mushrooms is a dish I often prepare when I want something special but don't have much time. The porcini mushrooms, fried and then combined with the fillet, create a truly delicious combination of flavors. The aroma of rosemary and sage in the frying oil enhances the taste of the mushrooms. The preparation is simple and quick, perfect for an elegant dinner or a special occasion. A touch of butter and aromatic herbs during the cooking of the fillet makes it even more succulent. Serve it with a drizzle of extra virgin olive oil to finish for an unforgettable taste experience!

  • Beef fillet
  • Porcini mushrooms
  • Sage
  • Rosemary
  • Seed oil
  • Garlic
  • Extra virgin olive oil (EVO)
  • Butter
  • Salt
  • Black pepper

Preparation (6 steps)

Flavoring the oil

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour seed oil into the Mixtopf. Add a sprig of rosemary, a clove of garlic and a sprig of sage. Heat for 5 Min./120°C/Stufe 1. Remove the flavored oil from the Mixtopf and set aside.

Frying the porcini mushrooms

Fry the porcini caps in the flavored oil in a pan for about 5 minutes, until golden brown. Drain and dry on absorbent paper. (This step is not performed in the Thermomix).

Preparing the fillet

Pour a drizzle of extra virgin olive oil into a pan. Add a clove of garlic and heat. Brown the beef fillets in a pan on all sides to seal the juices. (This step is not performed in the Thermomix).

Cooking the fillet

Cook the fillets in a pan for the desired time. Halfway through cooking, add a knob of butter, a sprig of sage and rosemary. Continuously baste the fillet with the aromatic sauce. (This step is not performed in the Thermomix).

Preparing the cooking sauce

1 min/140°F/Speed 2 60

Remove the fillets from the pan and set aside. Pour the cooking juices into the Mixtopf. Add a pinch of salt and black pepper. Mix for 1 Min./60°C/Stufe 2.

Plating

Plate the meat, drizzle with the cooking sauce prepared in the Mixtopf, add a drizzle of extra virgin olive oil to finish, some salt flakes and pepper. Place the mushroom cap and decorate with the aromatic herbs. (This step is not performed in the Thermomix).
