Description

These stuffed chicken rolls are a tasty and easy to prepare main course, perfect for a family dinner or a Sunday lunch. The filling of cooked ham and stringy scamorza cheese makes the meat tender and flavorful. I often prepare them when I have little time but still want to bring something special to the table. The recipe is simple and quick, and with the Thermomix® it becomes even easier! A delicious idea to vary the usual chicken breast, enriched by the scent of lemon and bay leaf. Ideal to accompany with a side of fresh vegetables.

Ingredients (9 ingredients)

  • 500 g sliced chicken breast
  • 150 g cooked ham
  • 150 g scamorza cheese
  • 30 g breadcrumbs
  • 1 piece lemon
  • 5 foglia bay leaf
  • 30 ml olive oil
  • 1 pinch salt
  • 1 pinch pepper

Preparation (7 steps)

Preparation of the rolls

Take a slice of chicken breast (about 125g), salt and pepper to taste. Do not use the Thermomix for this step.

Filling the rolls

Place a slice of cooked ham (about 38g) and a few pieces of scamorza cheese (about 38g) on top of the chicken slice. Do not use the Thermomix for this step.

Closing the rolls

Roll up and tighten well to close the roll. Repeat the process for the other chicken slices. Do not use the Thermomix for this step.

Preparation of the baking dish

Pour a little olive oil (about 20ml) into a baking dish. Do not use the Thermomix for this step.

Bread coating of the rolls

Pass the roll in the breadcrumbs (about 30g for all the rolls) and place it in the baking dish. Repeat the process for the other rolls and put them in the baking dish side by side. Do not use the Thermomix for this step.

Flavoring the rolls

Cut the lemon into slices and then in half and insert the wedges between the rolls. Also add a few bay leaves between one roll and another. Do not use the Thermomix for this step.

Baking in the oven

Pour a drizzle of oil (about 10ml) over the rolls and bake at 190 °C for 25 minutes. Do not use the Thermomix for this step.
