Description

These savory asparagus rolls are a real eye-catcher and super quick to prepare! I especially like to make them in the spring when the asparagus is fresh from the market. The combination of the crunchy green asparagus, the spicy marinade and the hearty cold cuts is simply unbeatable. A dash of lemon juice rounds the whole thing off perfectly. Ideal as an appetizer, finger food or light main course. If you don't like it so spicy, you can of course reduce the amount of seasoning paste. A fresh baguette or boiled potatoes go well with it.

Ingredients (10 ingredients)

  • 2 piece Organic Lemons
  • 1 tsp Seasoning paste
  • 4 tbsp Olive oil
  • 2 tbsp Honey
  • Salt
  • 750 g green asparagus
  • 3 tbsp Butter
  • 24 Scheiben Cold cuts
  • 5 Stiele Parsley
  • Pepper

Preparation (7 steps)

Prepare lemons

Wash the organic lemons. Grate the zest of one lemon and set aside. Then squeeze the lemon. Cut the second lemon into wedges and set aside as well.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Put the grated lemon zest, lemon juice, 1 tsp seasoning paste, 4 tbsp olive oil, 2 tbsp honey and salt into the mixing bowl and mix for 10 sec/speed 3.

Prepare and marinate asparagus

Thermomix® Setting
15 sec/Linkslauf/Speed 2 Reverse

Wash the green asparagus, cut off the woody ends and place in the mixing bowl. Add the prepared marinade and mix for 15 sec/reverse/speed 2. Push down with the spatula and repeat if necessary.

Wrap asparagus rolls

Wrap about 3 asparagus spears tightly in 2 slices of cold cuts each.

Fry asparagus rolls

Heat 3 tbsp butter in a large pan. Fry the asparagus rolls all around for 7–8 minutes until golden brown.

Chop parsley

Thermomix® Setting
3 sec/Speed 8

Wash the parsley, shake dry and place in the mixing bowl. Chop for 3 sec/speed 8.

Arrange and serve

Arrange the asparagus parcels on plates. Drizzle some of the frying juices over them. Sprinkle with the chopped parsley and pepper. Serve the lemon wedges for drizzling.
