Description

I love it when hearty flavors and tender meat come together! These braised lamb shanks with beans are an absolute highlight, especially in the cold season. The shanks become wonderfully soft and juicy, while the beans contribute a hearty note. The dish is a bit more elaborate, but the taste compensates for every minute. Perfect for a festive meal with family and friends or just to treat yourself. A dash of red wine rounds the whole thing off perfectly. A fresh baguette goes well with it!

Ingredients (13 ingredients)

  • 4 piece Lamb shanks
  • to taste Salt
  • to taste Pepper
  • to taste Flour for dusting
  • 2 tbsp Oil
  • 4 piece Medium-sized onions
  • 3 piece Medium-sized carrots
  • 0.5 l Red wine
  • 4 piece Bay leaves
  • 2 can Beans
  • 2 clove Garlic
  • 3 Stiele Parsley
  • 1 piece Untreated lemon

Preparation (9 steps)

Prepare lamb shanks

Wash the lamb shanks and pat them dry with kitchen paper. Then season with salt and pepper. Turn the shanks in flour so that they are lightly covered, and knock off any excess flour. Set aside the prepared lamb shanks.

Chop onions and carrots

Peel, quarter the onions and place in the mixing bowl. Chop for 3 sec./speed 5. Transfer the chopped onions and set aside.

Chop carrots

Thermomix® Setting

Clean, peel the carrots, cut into approx. 1 cm thick slices and place in the mixing bowl. Chop for 4 sec./speed 4. Transfer the chopped carrots and set aside.

Sauté vegetables

Heat 2 tbsp oil in a pan and fry the lamb shanks in it for approx. 10 minutes until browned on all sides. Remove the shanks and set aside. Fry the onions and carrots in the frying fat until golden brown.

Prepare for braising in the oven

Place the fried onions and carrots in a roasting pan. Deglaze with ½ l red wine. Return the lamb shanks to the roasting pan and add 4 bay leaves. Cover the roasting pan.

Braising in the oven

Place the roasting pan in the preheated oven (200°C top/bottom heat) on the lower rack and braise for approx. 2 hours. Turn the shanks from time to time and add a total of approx. ¼ liter of water.

Prepare gremolata

While the lamb shanks are braising, peel 2 cloves of garlic and place in the mixing bowl. Chop for 3 sec./speed 7. Wash 3-4 sprigs of parsley, pat dry, pluck and add to the mixing bowl together with the peel of half an untreated lemon (thinly peeled with a vegetable peeler). Chop for 3 sec./speed 5.

Add beans

Approx. 10 minutes before the end of the cooking time, drain 2 cans of beans (à 850 ml) and add to the lamb shanks in the roasting pan. Season with salt and pepper.

Arrange

Arrange the lamb shanks with the bean vegetables and braising sauce on a plate. Sprinkle with the gremolata (garlic-parsley-lemon mixture) and serve.
