Description

This orange buttermilk cake is a fruity, fresh treat that is especially suitable for festive occasions. The combination of juicy orange aroma and the slight acidity of the buttermilk makes it a special taste experience. I like to bake this cake when I want to conjure up something special for my family. The preparation is a bit more complex, but the result is worth it. By using sweetener, it is also suitable for diabetics. The cake should be served well chilled so that the flavors can fully develop. An absolute highlight on every coffee table!

Ingredients (17 ingredients)

  • 80 g Butter or margarine
  • 100 g Diabetic sweetener
  • Vanilla bean pulp
  • 1 pinch Salt
  • 2 piece Eggs (size L)
  • 100 g Flour
  • 1 piece Grated zest of 1 untreated orange
  • 1 piece Juice of 1 untreated orange
  • 1 gestr. TL Baking powder
  • 40 g Ground almonds
  • 4 piece Oranges (à 180 g)
  • 8 Blatt Red gelatin
  • 0.4 l Buttermilk
  • Sweetener
  • 200 g Whipped cream
  • 1 piece Cake glaze
  • 0.1 l Blood orange juice

Prepare dough

Thermomix® Setting
3 min/Speed 3

Put 80 g butter or margarine, 100 g diabetic sweetener, some vanilla bean pulp and 1 pinch of salt into the mixing bowl and mix for 3 min/speed 3 until frothy. Add 2 eggs (size L) one after the other and stir in for 20 sec/speed 3 each.

Mix and stir in dry ingredients

Mix 100 g flour, grated zest of 1 untreated orange, 1 level tsp baking powder and 40 g ground almonds in a separate bowl. Add the flour mixture to the mixing bowl and stir in for 30 sec/speed 3.

Bake dough

Line the bottom of a springform pan (24 cm Ø) with baking paper and grease the rim. Pour the dough into the springform pan and bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes. Then let it cool down.

Prepare oranges

Peel 4 oranges (à 180 g) with the white skin. Cut some fruit into 12-16 slices and place on kitchen paper. Cut the rest into pieces.

Soak gelatin

Soak 8 sheets of red gelatin in cold water.

Prepare buttermilk-orange mixture

Mix 0.4 l buttermilk and juice of 1 untreated orange in a bowl and sweeten with sweetener.

Dissolve gelatin

20 sec/122°F/Speed 2 50

Squeeze out the soaked gelatin and put it into the mixing bowl. Dissolve for 20 sec/50°C/speed 2. Add some of the buttermilk-orange mixture, stir for 10 sec/speed 2 and then stir the gelatin mixture into the remaining buttermilk. Refrigerate.

Whip cream

Thermomix® Setting
2 min/Speed 3

Put 200 g whipped cream and some sweetener into the mixing bowl and whip until stiff with the butterfly for 2 min/speed 3. Transfer.

Fill cake

Remove the cake from the mold, peel off the baking paper and place a cake ring around the cake. As soon as the buttermilk begins to gel, fold in the whipped cream and the orange pieces. Spread the cream on the cake and place the orange slices on top. Refrigerate for approx. 3 hours.

Prepare cake glaze

Thermomix® Setting
5 min/212°F/Speed 2 100

Put 1 cake glaze powder, 0.1 l blood orange juice and 125 ml water into the mixing bowl and boil for 5 min/100°C/speed 2. Let cool for 1-2 minutes and season to taste with sweetener.

Cover the cake with glaze

Remove the cake ring and pour the cake glaze over the cake. Refrigerate.
