Description

This blueberry quark tart is an absolute delight, especially in the summer when the blueberries come fresh from the market! I like to make it for birthdays or just for Sunday coffee. The combination of the crispy dough, the creamy quark filling and the juicy berries is simply unbeatable. And the best part: it's not that difficult to prepare, especially with the Thermomix®. A few puff pastry stars as decoration make it a real eye-catcher. Try it out, you will be thrilled!

Ingredients (7 ingredients)

  • 3 piece Eggs (size M)
  • 500 g Quark (20% fat in dry matter)
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 pinch Salt
  • 200 g Blueberries
  • Dried peas for blind baking

Preparation (6 steps)

Prepare tart pan and cut puff pastry

Grease a rectangular tart pan (18 x 26 cm) with a lift-off base and dust with flour. Unroll the puff pastry and remove the baking paper. Cut out a rectangle (20 x 28 cm).

Pre-bake dough

Place the dough in the pan and prick several times with a fork, cover with baking paper and fill with dried peas. Pre-bake the tart in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 10 minutes.

Separate eggs and prepare quark mixture

Separate the eggs. Place the quark in a bowl. Gradually stir in the egg yolks, 75 g sugar, vanilla sugar and salt using the whisk of an electric mixer. Beat the egg whites until stiff, gradually adding 75 g sugar.

Prepare blueberries and top tart

Wash and sort the blueberries. Remove the tart from the oven, remove the dried peas and baking paper. Pour the quark mixture into the pan and sprinkle with blueberries. Line a rack with baking paper and place the tart pan on one half.

Bake tart

Bake in the oven for another approx. 20 minutes at the same temperature. Cut out small stars from the remaining dough. Place on the baking paper 6-8 minutes before the end of the baking time. Remove, let cool.

Decorate tart

Dust the cake with powdered sugar and decorate with puff pastry stars.
